Cole Slaw - German Potato Salad Style COLESLAW !!! A Bag of Coleslaw Upgrade

 Oh Boy Cole Slaw...

But not just any Cole Slaw, this has all the flavors of a classic German Potato Salad (without the potatoes).

A thick grainy mustard sauce, combines with tangy cider vinegar and of course Bacon (Everything's better with bacon!) is sweetened with brown sugar.  Yeap, all the good stuff that makes a German potato salad popular.

This summer I have an obsession.  Earlier this year my wife (non-cook that she is) was asked to make a cole slaw for a back yard neighborhood BBQ.  She bought the convenient pr-mixed bag but was shocked to discover no recipe on the bag.  Turns out that Cole Slaw can be as simple as mixing in a little Mayo to as complicated as this recipe.

SO, once again I have made a few additions, subtractions, deconstructions, etc.  And came up with a recipe anyone would be proud to take to the neighbors.

After all, it's just cole salw.  May as well make yours something special!

 OK... Here's what I did...

Cole Slaw-
German Potato Salad Style

  • 1 Bag Cole Slaw
  • 6 slices bacon, chopped, cooked to a crispy texture, drained of grease.
  • 4 Cloves garlic. small mince
  • 1 TBS Olive Oil
  • 5 TBS Apple Cider Vinegar
  • 2 TBS Brown Sugar
  • 2 TBS Stone ground Dijon Mustard (With visible Mustard Seeds)
  • Salt and Pepper to taste
  • 5 Green Onions, sliced... Reserve 2 TBS For garnish.
Cooking Directions
  1. In a large deep skillet fry bacon over medium-high heat until browned and crisp. Remove the bacon from the pan and set aside.
  2. Add minced garlic to the bacon grease and cook over medium heat until browned, then add olive oil, apple cider vinegar,mustard, brown sugar, salt and pepper to the pan and bring to a simmer. Remove from heat and allow to cool.  Add the Cole Slaw mix, sliced red onion and cooked bacon. Stir to mix
  3. Transfer to serving dish, serve warm/room temperature or transfer to the refrigerator and chill to serve cold.
  4. Serve Warm
