Girl Scout NO BAKE Thin Mint Truffles - EASY PEASY!

Ah yes, the neighborhood cookie exchange... A chance to show off your icing skills... OR a chance to have your cookie gobbled up on the spot.  These are pretty enough, but more important, once you use the phrase, "And they taste just like Girl Scout Thin Mint Cookies", everyone wants to give them a try.

And they do not disappoint, they do taste just like the most popular of the annual ritual feared by office working Dad's everywhere (and the office worker's as well, truth be told... But I digress...).

These really are incredibly easy.  The secret ingredient is a package of Keebler brand GRASSHOPPER Cookies.  The rest is just smoke and mirrors to get the look...

These are super easy to make and a delight to serve!

 Here's what I did...


  • 1 Package Keebler GRASSHOPPER Mint Chocolate Cookies
  • 1/2 Brick of Cream Cheese
  • 1 Package Almond Bark (seperated)
  • Mint Green Food Coloring (I used Wilton coloring gel from Michael's Craft store)
  1. In a food processor, CRUSH the cookies
  2. Add the cream cheese and pulse until the cookies have mixed with the cheese and becomes moist.
  3. Take a tsp scoop and your hands and form into balls.
  4. Melt the Almond Bark a cording to directions.
  5. reserve 1/4 cup of the melted bark to use as garnish.
  6. Color the remaining bark with the mint green coloring.
  7. With the balls on a skewer, dip into the colored bark.  Drop them on a sheet of parchment paper.
  8. When they have cooled and hardened, remelt the white reserved bark.
  9. Using a fork, dip and drizzle.  Be as neat as you like, I like the individual rustic look, but you can also do stripes with a decorating bag and small tip.
  10. Allow the drizzle to cool and harden and ENJOY!


I made these as part of the Cul de Sac Cookie Exchange!  Not quite as popular as the NO BAKE Peanut Butter Snowmen (Follow the blue lettering or click the photo to the right to see that recipe).  They all wanted the more kid friendly cookie.  But these held their own in popularity, and for me, were DELICIOUS!

  1. I've never heard of almond bark, is there a benefit to use that over white chocolate?

    1. Almond bark is a candy coating. It's often used to substitute for chocolate because it's cheaper. But it doesn't taste exactly the same. I think I'll try this with real chocolate. I can't wait to give this recipe a try! It sure looks tasty!

  2. FYI - I've made Oreo truffles (substitute the grasshopper cookies with oreos) with Almond Bark & White Chocolate and the Almond Bark hardens better and is less messy on the fingers. I didn't notice a big difference in taste and every cookie was devoured, regardless of the coating. Either way, a huge hit! :)
