Nothing beats the taste of fresh corn and this recipe can certainly be made with corn cut fresh from a cob. But this also is a wonderful recipe to keep handy in the dead of winter when the freshest corn you can find is in the freezer section.
LOADED with flavors, from Worcestershire sauce, extra sweetener, spicy peppers and spices, this will put that taste of summer on your tongue throughout that cold dreary winter.
A wonderful tasty bright colored dish that adds lots of color to your plate. Best when made a day in advance (Perfect sides for a backyard BBQ are ones that you can make ahead of time). This is destined to become a favorite veggie recipe!

OK... Here's what I did...
Fast and Easy Chilled
Sweet Corn Relish
Ingredients
- 4 Cups Frozen Sweet Corn (Already cooked, simply thaw under running HOT water)
- 1 Large Red Bell Pepper, Diced size of a corn kernal
- 1 Medium Jalapeno Pepper, seeds, stem and white inner membrane removed, Minced very small
- 2 TBS Shallot (can substitute sweet Onion), minced tiny pieces
- 1/4 Cup Brown Sugar
- 2 TBS Cider Vinegar
- 2 tsp Dry Mustard Powder
- A few dashes (to taste) Hot Sauce (I use Tabasco Brand)
- 1 tsp each Salt and Pepper (Additional to taste)
- 1 tsp Italian herb spices (I used fresh Thyme)
- 1 tsp Worcestershire Sauce
- This is a dump and mix recipe...
- Dump all ingredients into a bowl, Mix well.
- Drain in a colander for about three hours.
- Chill in a covered bowl overnight.
- Serve chilled and ENJOY!
