IMPOSSIBLY EASY Crinkle Cake Cookies - Minty Green for Holidays

There's a joke in here somewhere, but all I have is the punch line...

"Here's your brain on Saint Patrick's Day".

Anyone more clever than I am please drop a comment with the beginning of the joke.

Until, this is such an easy cookie to make.  And very useful.  Use red food coloring around Christmas or St Valentine's Day, Yellow Pastel for Easter,  for 4th of July, use three colors, etc.

But the real advantage to these is how easy they are.  Start to finish, you have cookies in about 20 minutes.  You use a box cake mix, and some items that are in most folks pantries.  Easy enough for kids to do and not only do they have a terrific look, they taste fantastic.  Soft and chewy like a cupcake top.  I use a French Vanilla Cake mix and whatever flavoring you might like... like Mint for these!

 OK, Here's what I did...


Crinkle Cake Cookies

Ingredients
  • 1 standard Cake Mix (store bought box)
  • 6 TBS Butter, melted
  • 2 Large Eggs
  • About 40 Drops Green Food Coloring (add about 10 drops at a time and stop when you get the color you like)
  • 5 Drops Wilton Brand liquid Flavoring (Mint), optional
  • 1 Cup Powdered Sugar
  • 1 tsp Corn Starch
Cooking Directions
  1. Preheat the oven to 375°.
  2. Melt the butter, allow to cool
  3. In a shallow dish, mix together the powdered sugar and cornstarch.
  4. In a large bowl, mix together the butter, cake mix and eggs.
  5. Add the green food coloring and Mint Flavoring and make very well
  6. Form into 1 TBS Size Balls
  7. Roll the balls in the powdered sugar mix and coat well
  8. arrange on a cookie sheet lined with parchment paper
  9. Bake for 8 minutes in pre-heated oven.
  10. Allow to cool on the baking sheet for one minute, then move to cooling rack.
  11. Serve with a glass of milk and ENJOY!!!

The instructions are a little long winded, mix, roll in a ball, coat in powdered sugar and drop the ball on the parchment paper... bake and the crinkles are formed in the oven... Easy as can be!!!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
