My Granny makes the BEST Cheesy Potato Salad

Oh Boy, Potato Salad...

But not just any potato salad, this is the recipe that GLOWS at a church potluck along side several bowls of tater salad.  This is the one that made grandma a legend among the Church Basement Ladies.

It is the classic Yellow Mustard recipe, along with several "secret Ingredients" that you probably already have in your pantry (and a couple you may not).

First, the two items you may do not have, the cheeses.  That's right, not just one type (Cheddar), but I also dump in a tub of Blue Cheese Crumbles.  Adds just the right amount of "something, Something" to the dish.  Not a strong enough flavor to make you apologize to the blue cheese haters (yes, there are a few), just enough to add a terrific flavor that you don't need to identify.

But also, in addition to yellow mustard and mayo (the classics), i add a little bit of sour cream to add to the creaminess.  Toss in some chives and Paprika for color, some BBQ spices and sauce for flavor and you have upgraded the classic Potato Salad to the one that everyone hunts for.

I was serving up a Football party.  Sadly, the one and out repetition of the KC Chief's post season quest for another Super Bowl appearance became prophetic (we were robbed with that holding call in the 4th quarter, but I digress)... But these hit the buffet table just as the first quarter started and we settled in with all the optimism you could imagine.  I served up a KX Classic BBQ Spread, with ribs, brisket and more... Just screamed the need for Potato Salad as we grabbed a plate and moved on to making plans for a football game in February.... Sigh

I of course already own a Kitchenaid brand stand mixer.  White goes with everything standard.  But I recently went to a friend's kitchen with all matching appliances in her signature color.  I have been pondering upgrading to the larger professional model and now see that it is indeed available in an incredible dark green color (as well as about a dozen other colors)... Jealous and plotting my upgrades...



And here's the recipe, just below the photo...


OK... Here's what I did...


Cheesy Potato Salad


Ingredients
  • 5 Pounds Red Skinned Potatoes, Large Dice, cooked until fork tender
  • 8 Ounces Sharp Cheddar Cheese, freshly Grated
  • 1 Tub (4 OZ) Blue Cheese Crumbles
  • 4 Hard Cooked Eggs, Chopped
  • 1 Medium Red Onion, Chopped
  • 4 TBS Chopped Chives, divided, 3 TBS in mix, reserve 1 TBS for Garnish
  • 3 TBS Your favorite Spice Rub Mix, divided 2 TBS in the taters, 1 TBS as garnish
  • 3 TBS Yellow Mustard
  • 1-1/2 Cups Mayonnaise
  • 1/2 Cup Sour Cream
  • 1 TBS Spicy BBQ Sauce of your Choice
Cooking Directions
  1. Cook the potatoes til just done.  While the potatoes are cooking, prepare the "sauce".  It needs to be ready to add to the potatoes while they are still hot..
  2. Combine all the other ingredients (be sure to reserve some of the spices as toppings/garnish) into your kitchenaid mixer and mix on low for about three minutes.
  3. While the potatoes are still warm, mix in about 1/4 of the potatoes and 1/4 of the goo in a large mixing bowl. Then add about 1/2 the remaining potatoes and goo, mix that layer, then the final layer.  Transfer to a serving dish and cover tightly with cling wrap.
  4. Cool in the refrigerator for at least three hours prior to serving, preferably over night for all the flavors to mix mingle and influence.
  5. Just prior to serving, garnish with chives and additional spices
  6. Serve Chilled and ENJOY!

Warm Bacon German Potato Salad

 OH BOY POTATO SALAD!

I love German potato salad.

I make a lot of potato salad during the summer.  Just always seems to go together with back yard BBQs and about any pass a plate get together PotLuck.

I rarely make German style potato salad and I really don;t know why.  Aside from the need to serve this warm (Best warm but OK room temp or even cold... Just better warm).  But, whenever I do make German style I always want more.

German "Kartoffelsalat" is a popular variation that is generally prepared with vinegar, potatoes, salt, pepper, vegetable oil, mustard, vegetable or beef broth, onions and topped with chive. This style of potato salad is usually found in Southern Germany. Potato salad from northern Germany is generally made with mayonnaise and quite similar to its U.S. counterpart.

I especially love this recipe.  Loaded with a tart vinegar taste but also heavy with the mustard flavor that makes this version famous.

Easy and quick to make and LOADED with the unique flavor that makes this famous...

 OK... Here's what I did...

German Potato Salad

Ingredients
  • 2 Pounds Red Potatoes, Large Dice, Boiled until cooked through, about 10 minutes
  • 6 slices bacon, chopped, cooked to a crispy texture, drained of grease.
  • 4 Cloves garlic. small mince
  • 1 TBS Olive Oil
  • 5 TBS Apple Cider Vinegar
  • 2 TBS Brown Sugar
  • 2 TBS Stone ground Dijon Mustard (With visable Mustard Seeds)
  • Salt and Pepper to taste
  • 5 Green Onions, sliced... Reserve 2 TBS For garnish.
Cooking Directions
  1. In a pot of boiling water add the already diced potatoes and Cook until cooked through... About 10 minutes.  Be careful to not over boil, Red Potatoes turn mushy if over cooked.. Drain and return potatoes to pot.
  2. In a large deep skillet fry bacon over medium-high heat until browned and crisp. Remove the bacon from the pan and set aside.
  3. Add minced garlic to the bacon grease and cook over medium heat until browned, then add olive oil, apple cider vinegar,mustard, brown sugar, salt and pepper to the pan and bring to a boil. Add the potatoes, sliced red onion and bacon. Heat through and transfer to a serving dish.
  4. Transfer to serving dish, serve warm or transfer to the refrigerator and chill to serve cold.
  5. Serve Warm

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy

Deviled Egg Potato Salad - 52 Church PotLuck Side Dishes

 OH BOY POTATO SALAD!

But not just any... This has the flavor (and ingredients) of your favorite "Mom's Old School" Deviled Eggs...

Yellow Mustard... Pickle Relish... Mayonnaise base (but also  more up to date Sour Cream and Greek Yogurt additions)!  Even Plenty of hard boiled eggs in the mix.

You can even dress it up with actual Deviled Eggs as garnish.   Simple classic eggs all the way up to fancy ones like in my photos... Blackened Cajun Shrimp Deviled Eggs (come back tomorrow for that recipe).

Takes a simple potato salad and moves it up to something special your guests will remember.

 OK... Here's what I did...


Deviled Egg Potato Salad


Ingredients
  • 2 Pounds Red Potatoes, Large Dice, Boiled until cooked through, about 10 minutes
  • 6 Eggs, divided for additional Deviled Eggs to Garnish
  • 3 TBS Reduced Fat Sour Cream
  • 2 TBS Greek Yogurt
  • 2 TBS Yellow Mustard
  • 1/4 Cup Pickle Relish
  • Several Turns of a Pepper Grinder (About 2 TBS for me, to taste)
  • 1 tsp Sea Salt
  • 5 Green Onions, sliced... Reserve 2 TBS For garnish.
Cooking Directions
  1. First, hard boil the eggs.  In a pot of cold water, add the eggs.  If needed, add additional water to cover eggs by at least 1 inch.  Over medium high heat cook the eggs until the water reaches a rapid boil.  Remove from heat and cover.  let set for 17 minutes.  One at a time, working quickly, dump an egg in ice water to cool and peal.  Use 3 to make your favorite deviled egg recipe to use as garnish.  Dice the remaining three eggs to add to the potato salad.
  2. In a pot of boiling water add the already diced potatoes and Cook until cooked through... About 10 minutes.  Be careful to not over boil, Red Potatoes turn mushy if over cooked.. Drain and return potatoes to pot.
  3. In a small bowl, combine the yogurt, sour cream, mustard, pickle relish, salt and pepper and half of the green onion slices.   Whisk to blend.
  4. Mix diced eggs with the potatoes and fold in the dressing until coated.          
  5. Transfer to serving dish, serve warm or transfer to the refrigerator and chill to serve cold.
  6. Garnish with additional Green onions and Deviled Eggs
    ... and ENJOY!

Creamy Dill Cucumber and Potato Salad - 52 Church PotLuck Side Dishes

Always on the lookout for new potato salad recipes, this one occurred to me when I was serving up a small lunch with dilled cucumbers.

Why not combine two of my favorites, dilled potatoes and dilled cucumbers.

And it worked just fine!

Creamy sweetness from non fat yogurt mixed with a tangy bit of sour cream and of course that amazing rich dill flavor.

Can be served warm but best when made ahead of time and chilled allowing all of the flavors to mix and mingle.

 OK... Here's what I did...


Sour Cream and Dill Potato Salad


Ingredients
  • 3 Pounds Red Potatoes, Large Dice, Boiled until cooked through, about 13 minutes
  • 1 long English Seedless Cucumber, Cut into large dice
  • 3 TBS Reduced Fat Sour Cream
  • 2 TBS Fat Free Greek Yogurt
  • 2 tsp (plus additional for Garnish) Dried Dill Spice
  • Pinch of Salt and Pepper to Taste
Cooking Directions
  1. Dice and Cook the potatoes until cooked through. Drain and return to pot. Peel the cucumber and dice.
  2. In a small bowl, combine the yogurt, sour cream, dill, salt and pepper/ Whisk to blend.
  3. Mix Cucumber with the potatoes and fold in the dressing until coated.
  4. Transfer to serving dish, serve warm or transfer to the refrigerator and chill to serve cold.
  5. Garnish with additional Dill weed... and ENJOY!

"Old School" Yellow Mustard Potato Salad - 52 Church PotLuck Side Dishes

I spent quite a bit of time this summer with my Mother-in-Law in a little town in South Dakota.  When you look up a definition of "Old School" cook in the dictionary, chances are you would see an image of her.

She raised three girls (one perfectly) in a little town with limited access to the new fangled ingredients we take for granted today.  Whatever she made was generally simple, seasonal, and delicious.  Also a tad repetitive.  This is one of those repetitive recipes.

When she thinks potato salad, this is pretty much all that she thinks of.  Yellow mustard and Mayo, pickle relish and taters.  I added the red spices just for a little extra flavor, color and to look good in the photos.  The rest is just as she made it, liked it and raised those girls on for the best part of a hundred years.

No Church Social, big family gathering, potluck or cook out would be complete without this dish.

"Old School"
Yellow Mustard
Potato Salad


Ingredients
  • 3 Pounds Russet Potatoes, Diced to 1/4 Inch wide, quarter size pieces
  • 1/3 Cup Mayonnaise
  • 1/3 Cup Yellow Mustard
  • 1/3 Cup Pickle Relish
  • 1 tsp Salt (to Taste)
  • 1 tsp Black pepper (to Taste)
  • 1 tsp McCormick Brand "Perfect Pinch" Salad Mixins Spice mix
  • Xtra Salad Mixins spice mix for garnish
Cooking Directions
  1. Boil diced potatoes in salted water until just tender, about 10 minutes.
  2. In a large bowl, combine Mustard, mayo, Relish, Salt, Pepper and half of the Salad Mixins SPice mix and stir to blend.
  3. When the potatoes are tender, remove from heat and drain.
  4. Add the HOT drained potatoes into the Mayo/Mustard mix and fold until well combined and potatoes are coated.
  5. Transfer to a serving dish, sprinkle additional Spices as a garnish and chill in the refrigerator for 3 hours up to overnight.
  6. Serve chilled and ENJOY!

Bacon Ranch LOADED Potato Salad - 52 BBQ and Grilling Secret Extras and Church PotLuck Side Dishes

OH BOY!  LOADED INDEED!!!

And that tangy taste of Ranch Dressing (Double zinged with Ranch Dip Packets and even more Ranch Salad Dressing added to the mix!

Sharp Cheddar Cheese mixed throughout and beautiful colorful Earthy Green Onions to add flavor and eye appeal...

And of course BACON BACON BACON!

This has become my new favorite Potato Salad.  Took this to a Pot Luck recently.  There were three different potato salads... mine was gone at the end of the day!

Church PotLuck, Family gathering, Neighborhood BBQ picnic... This LOADED recipe fits in everywhere!

OK... Here's what I did...


Bacon Ranch
LOADED Potato Salad


Ingredients
  • 5 Pounds Russet Potatoes, cut into bite sized pieces
  • 1 (16 Ounce) COntainer Sour Cream
  • 2 (1 Ounce) packages Ranch Dressing
  • 1/4 Cup Ranch Salad Dressing
  • 1 Pound Thick Cut Bacon, Cooked Crispy, Drained on a paper towel (Reserve 1/2 Cup for Garnish)
  • 2 Cups Sharp Cheddar Cheese, Shredded
  • 2 Bunches Green Onions, Thinly Sliced, Green and White Parts, (Reserve 1/4 Cup for Garnish)
Cooking Directions
  1. Bring a large pot of water to boil over high heat add the potatoes and reduce the heat to medium high and boil for 12-15 minutes or until fork tender. Drain and rinse under cold water.
  2. In a small bowl whisk together the sour cream, Ranch Dressing and ranch packet until blended. In a large bowl, add potatoes, Most of the bacon, cheddar cheese and Most of the green onions. Stir in the sour cream ranch mixture until blended and coated well. Refrigerate for 2 hours to overnight before serving.
  3. Serve Chilled and ENJOY!

A list of something NEW worthy of being shown off at a neighborhood BYODish (Bring Your Own Dish) Party, a Family special occasion dinner, Any Big Holiday Gathering or of course that glorious day when you bring a dish to share with your Church family...

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
