Love the Taco! What's not to love.
I recently made a BIG batch of pulled pork (DR Pepper Spicy pulled Pork, Crock Pot Easy). While for the most part I make pulled pork just so I can eat a pulled pork sandwich; there are always leftovers.
This is one of my favorite ideas for what to do with left over pulled pork.
There are plenty of pulled pork taco ideas, but I sure do like this one.
Sweet and spicy with tropical accents and everybody LOVES avocado.
Like I said, What's not to LOVE?
OK... here's what I did...
Avocado and Mango Pulled Pork
Puerto Rico Taco

Ingredients
- 1 Gallon Left over Pulled Pork
- 24 Soft Flour Tortillas (I like the large Burrito style)
- 6 mostly firm Avocados (cut in half, skins removed, seed removed, cut into 48 slices (4 slices from each half)
- 6 Mangoes, cut in half carefully around the seed, skins removed, seed discarded, cut into 48 slices (4 slices from each half)
- 1 Pound Spinach, stems removed
- Your favorite BBQ Sauce to Drizzle over the tacos.
- Prep all the ingredients. Mix the Spinach with the mangoes (the juices will sweeten the spinach and slightly wilt it.
- Now just assemble the taco, little pulled pork, little avocado, little mango and spinach on a tortilla, fold like a taco or seal like a burrito.
- Serve outside on a warm summer evening with a tropical drink (Something with an umbrella) and ENJOY!
