Cookie Dough Brownies - 52 Cakes and Pies, Catering Recipes and Church PotLuck Desserts

This is one of my Shhh... Don't tell anyone recipes.

One of my most popular catering recipes.  Everyone LOVES Raw cookie Dough!

But wait, this is just the illusion of raw cookie dough.  All of the taste, flavor and consistency; BUT, no eggs.  You know, the whole raw eggs and bubonic  plague thing.  SO, this is tasty and safe!

When I am making these at 4 AM for a lunch job I laugh to myself that I should call these, "I just got dumped" brownies.  Raw cookie dough and a broken heart just seems to go together.  It's lonely in the kitchen sometimes.

But I digress...

This recipe I saw originally on JoAnne's Blog, Eats Well With Others.  I made a couple of small changes (She adds a layer of thin melted chocolate on hers but I double the amount of chocolate chips in mine).  She also has a scratch brownie recipe... I used a box.  Follow the blue letter link to see her version.

OK, the box mix.  I have and do make a scratch version on occasion.  But I also use the box mixes (truthfully more often than not), I shop sales, every so often, I can find a box (double Chocolate Fudge) for just ninety-nine cents... Why not!

Shhhh... That's part of the part to not tell my clients or the Church basement ladies that judge everything I cook for the church socials...

But I digress...

This is a fantastic dish.  Fast and easy (hey, it's a box mix).  The Icing makes the box mix something spectacular, delicious and a great presentation.  Let 'em judge, the proof is in the taste!


OK... Here's what I did...


Cookie Dough Brownies


Ingredients
  • 1 Box Brownie Mix
  • Ingredients Needed for the mix
  • FOR THE COOKIE DOUGH ICING
  • 1 Cup (2 Sticks) Butter, softened to room temperature
  • 1/2 Cup Sugar
  • 1 Cup Packed Brown Sugar
  • 4 TBS Half and Half (Can use whole milk)
  • 1 tsp Vanilla
  • 1-1/2 Cup Flour
  • Large pinch Salt
  • 1 Bag (2 Cups) Mini Chocolate Chips
Cooking Directions
  1. Prepare a large casserole (9X13) Dish. Line with parchment paper. Mix the brownies as directed on the box. Pour the mix into the parchment lined pan and bake as directed on the pan. Allow the brownies to cool completely before adding topping.
  2. While the brownies are baking, prepare the Cookie dough icing... In the bowl of a stand mixer, whisk together the softened butter and both sugars until light and fluffy, 3-5 minutes. Add the milk and vanilla mixing until fully incorporated. Add the Salt and Flour and mix once again until incorporated.
  3. And finally, add the chips and mix one last time.
  4. GENTLY add the icing to the center of the COOLED brownies. Working from the center out, spread the icing to an even layer (Ideally the same height as the brownies). Lift the brownies out of the pan, slice into 2 inch squares. Refrigerate until ready to serve.
  5. Serve Chilled with a COLD glass of Milk and ENJOY!!!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
