Christmas music on the radio, Cookies are baking almost non-stop, invites from friends and family are streaming in to spread Holiday cheer...
And the fridge is filled with leftovers from Thanksgiving!
This is my GOTO leftover recipe for Turkey AND the vegetables. Carrots, peas, beans, even a layer mashed potatoes and/or sweet potatoes could be added to the bottom of this.
Even a drizzle of Cranberry sauce could be added. What's not to love?
Just a few hints, plan for this recipe, either make extra Turkey Gravy (click HERE for a link to a way to stretch your gravy and double the amount you normally make).
And be sure to pick the turkey clean. You bought the whole thing, don't toss it filled with bits.
And don't worry about the vegetables.
This year I made a cold Pea Salad for Thanksgiving. It had a little mayo and a lot of mustard (as well as bacon, peppers and a chunk of the kitchen sink). It went great in the stew. I am personally not a fan of Holiday green bean casserole, but if you made it and you have some leftover.. go ahead and add. Those crunchy onions will go well with this.
Glazed Carrots even mashed potatoes or sweet potatoes (added as a layer on the bottom) all will work just fine in this.
This is an "everything but" the kitchen sink recipe. Clear out the fridge of your leftovers. It all works.
I did miss a presentation opportunity, I didn't have any leftover cranberry sauce, but wouldn't this be prettier if you had a drizzle or dollop of C-Sauce added as a topping?
Leftover casserole... It is indeed the most wonderful time of the year!
OK... Here's what I did...
Turkey Shit on a Shingle (Creamy Turkey and Biscuits and Gravy Leftovers)
Ingredients
- 6 Cups Turkey Bits (Half Dollar Size)
- 4 Cups Turkey Gravy
- 2 Cups Various leftover Vegetables (Carrots, Peas, Corn, etc)
- 2 Onion, diced and sauteed in butter until soft
- 1 Cup Whipped Cream (use leftover whipped cream or Half and Half or Milk
- FOR THE BISCUITS
- 4 Cups Flour
- 2 TBS Baking Powder
- Large Pinch Sea Salt
- 2 Sticks Butter (1 Cup) Softened to Room Temperature
- 2 Cups plus 1/4 Cup Buttermilk (divided)
- 2 Large Eggs
- 2 TBS Pepper
- Assemble your leftovers... Pick the Turkey clean of bits, chop up the meat from the uneaten Turkey legs, thighs and wings (Dark meat works best in any leftover casseroles). In a large stew pot, add the turkey bits, gravy, leftover vegetables (Green bean casserole works great... Add the crunchy parts and all) and the cream (can also use up sour cream leftovers as well). Stir to mix and heat to simmer.
- MEANWHILE, make the batter for the biscuits... Preheat the oven to 425 degrees.
- In a large bowl, combine the Flour and Baking Powder, whisk to mix. Work the soft butter into the dry mix, using your fingers continue to rub together until well integrated.
- In a small bowl, whisk together the 2 cups Buttermilk and Eggs.
- Fold together the wet and dry ingredients, Do not over mix, that makes dense biscuits.
- Prepare a large casserole (9X13) dish with non stick spray. Pour the Turkey leftovers into the bottom of the pan.
- Spoon hockey puck size bits of the batter evenly over the sauced turkey/vegetables.
- Bake for 20 minutes until the biscuits are baked through and are golden brown and delicious looking.
- Once cooked, brush on additional buttermilk and sprinkle with additional pepper to taste.
- Serve HOT and Enjoy!
