It has been a big month of backyard entertaining at our little corner of the Cul de Sac.
Visiting family, friends, and neighbors have been dropping by every weekend and at least a time or two during the week. Dishes like this lend themselves very well to a summer BBQ. The dish is served cold (just in case the weather heats up). And it actually tastes best if you make this several hours ahead of time. This way it has several hours to rest and mix and mingle the flavors.
This does have a strong mustard taste. The country dijon style has whole mustard seeds cooked into the mustard. So each bite has a burst of intense mustard flavor. If this worries you, substitute half country style with half smooth dijon... But really, I love this salad as is. That savory mustard flavor, combined with the herbaceous flavor of the fresh rosemary and this is not your typical supermarket deli counter mustard potato salad... This one is special.
Oh... And BACON! 'Nuff Said
OK... Here's what I did...
Country Dijon Bacon Potato Salad
Ingredients
- 3 Pounds Gold Potatoes, Large Dice
- 1/4 Cup Sour Cream
- 1/2 Cup Mayonaise
- 3 TBS Country Style Whole Grain Mustard
- 1/2 Medium Red Onion, Small dice
- 2 tsp Salt
- Several turns of a Pepper Grinder for fresh cracked pepper
- 2 TBS Fresh Cut Rosemary, rough chop, divide in half
- 4 SLices Thick Cut Bacon, cooked crispy and diced, divide in half
- Put potatoes and water to cover in a large pot; bring to a boil over medium-high heat. Cook 20 minutes or until potatoes are tender. Drain and let cool.
- Stir together sour cream and next 5 ingredients.
- Stir together potatoes, sour cream mixture, 1/2 the Rosemary and 1/2 the Bacon in a large bowl. Cover and chill at least 1 hour; keep chilled until ready to serve.
- Garnish with remaining bacon and rosemary just before serving
- Serve Chilled and ENJOY!

That is one of my favorite BBQ sides. My favorite is old fashioned Southern style potato salad but I only make it about every 3rd time because I love the more modern ones too.
