Root Beer BBQ Sauce - Grilling Time 52 Small Batch Canning Ideas

Pin It Now!

Did you catch yesterday's post of BBQ Vidalia Candy Sweet Onions?  Basically an amazingly easy (3 ingredients) side dish of slow roasted sweet onions flavored with a BBQ sauce.  I didn't go into details, but the BBQ sauce you see in those onions is this fresh made sauce.

I love making my own BBQ sauce.  So easy to whip something up special for whatever I am grilling.  I have already posted a Sweet/Heat Bourbon BBQ Sauce, with a rich Earthy spiced flavor... Something for the grown-ups.  I also posted my Hawaiian Sweet BBQ Sauce, a more sweet sauce infused with minced bits of Pineapple with just hints of jalapeno that I made to appeal to my wife and the ladies.

And now I am completing the circle with a much more sweet sauce, this Root Beer BBQ Sauce.  And yes, it is indeed made with root beer (always full strength, never cook with diet sodas, too many questionable chemicals that will alter taste).  The root beer cooks down into a thick syrup, infusing even the few bits of Jalapeno with a sweetness that appeals to the kids at your table.

Like the rest of my BBQ sauces, this is very easy.  The main ingredient is plain old ketchup, just a matter of mixing in a few items and allowing them to simmer to the desired thickness.  The sweetness of the sauce was perfect to pair with the Onions.  I also made some sweet ribs with a Root Beer BBQ glaze (will be posting them soon) with this sauce.  As I have said, I am posting my big whoop dee-doo menu from a large Labor Day BBQ... a dozen friends and family (and yes several kids that practically licked the ribs of the sauce) and 10 dishes plus condiments, drinks and desserts.  It is soooo easy to make this and adds so much cache bragging rights when you pull out a jar of home made sauce... Especially when it is as good as this...

OK... Here's what I did...

Root Beer BBQ Sauce

  6. Add the lemon juice and zest and season with salt and pepper.
  7. Transfer while HOT to sterilized canning jars and allow to cool.
  8. Refrigerate sealed in jars for up to 6 months. Once opened, use within a couple of weeks.

BBQ Vidalia Candy Sweet ONIONS - Grilling Time and 52 Simple But Next Level Dishes

Pin It Now!

3 ingredients... now that's simple.  And the payoff is a side dish that is unique, has layers of textures and is amazingly sweet and delicious.

You start with the legendary Vidalia Onion.  Those super sweet onions.  In my area (Kansas, you know, God's Country), our local farmer's sell a variety of onion they call simply "Candy Onions" or sometimes, "Candy Sweet Onions".  While I am a huge fan of the real Vidalia, I am also a big fan of buying fresh and local so normally I make this with the locally grown Candy Sweet variety.

Only important thing is to be sure to hunt down the sweetest variety of onion you can find.

I did grill these in my gas grill.  WOrks just as well in a coal grill (Indirect heat, set up like an onion, lit coals shoved to the side, pan with onions on the other side of the grate).  I have also made these in the winter in a regular kitchen oven.

This really is very very easy.  While the cooking instructions have several steps, basically you take a whole onion, trim the ends, hollow out enough space to add some BBQ sauce, bake in a pan with some chicken stock in the bottom, after an hour, add more stock and more BBQ sauce and in an hour you have a fantastic unusual side dish.

Super Sweet, Super Easy and Super Delicious...  And this dish will very much take your BBQ party to another level.with almost no work!

OK... here's what I did...

BBQ Vidalia
Candy Sweet ONIONS

Ingredients
  • 6 Large Vidalia Onions (or Candy Sweet Variety)
  • 12 TBS Plus 6 More TBS Sweet BBQ Sauce
  • 1 Cup plus 1 More Cup Chicken Stock
  • Sliced Green Onion to Garnish
Cooking Directions
  1. Carefully slice the ends of the onions off. The root tip, just enough so the onion will sit flat, the sprouting tip cut to almost the widest part of the onion.
  2. Hollow out about 1 inch bowl from the sprout end of the onion, making sure you do not puncture all the way through the sides or bottom.
  3. Put 2 TBS BBQ Sauce in each of the hollowed out ends.
  4. Line them up on the bottom of a disposable aluminum pan.
  5. Add one cup Chicken Stock to the bottom of the pan.
  6. Set in your grill or smoker, indirect heat, about 300 degrees for one hour (lid closed of course, making this an oven).
  7. After an hour your onions should begin to soften, the BBQ sauce is seeping into the softened layers of the onion and most of the stock has evaporated or been absorbed into the onion. Add another cup of stock to the bottom of the pan.
  8. Slice the onions into quarters now and drizzle a fresh bit of BBQ sauce over the slices.
  9. Return to the grill, same temp and setting for another hour.
  10. To serve, transfer the onions to a serving dish, trying to be careful to keep each onion quarter together, garnish with slices of green onion
  11. Serve Warm and ENJOY!

Beer Braised Grilled Faux Meatball Brats - Grilling Time Appetizers

Pin It Now!

This recipe has a huge payoff in looks and taste.  The look is of meatballs, but in fact they are simply sliced Sausage Brats.  By slicing the brats and then simmering them in a pot of beer you infuse all that flavor throughout for a much more intense flavor fix.

The casing stays on around the center of each slice.  Since the ends are open, as the brats cook they expand around the edges creating more of a meatball look.

Once you have simmered the faux meatballs, the meat is done cooking.  Transferring these to a grill pan lets you get the look, texture and taste of charred edges.

These were a big part of my Labor Day menu and success.  A dozen guests, 10 dishes and a very successful end of summer celebration!  Be sure to keep coming back over the next few days as I will be posting all of this menu.

These were a terrific appetizer... add a bunch of toothpicks and your guests can munch while you work on the last minute details of getting the main dishes and sides ready!

Of course with a menu this big I was after something simple to fix.  And that is this dish,  A little slicing, an hour simmer and 5 minutes on the grill and done.

2 Bottles Top Quality Beer
10 Sausage Brat Links
2 Medium Red Onions sliced into rings and divided Half during simmering, half during grilling
Sliced green Onions for garnish

All of the prep work is done in advance.  Brats are raw sausage (as opposed to hot dogs which are precooked).  But they also come with a casing on the outside to hold the meat n shape. Just slice about an inch long pieces,

I make a bed of Onions in a crock pot (single layer to prevent the brats from touching the HOTTER bottom).  Set the crock pot on the lowest setting, Add 2 bottles of beer and another layer of onion rings.

As in all cooking, the quality of the beer does matter.  It's better to drink less than to drink watered down light beer.  I prefer to shop local, drink local.  Here in Kansas City there is a wonderful local brewer, Boulevard Beer.  I selected their Bully Porter, an English style heavy Porter style Beer that is about as full of flavor as you can get,.  You need to add enough beer to just cover the brats.

Slow heat the beer (not even a simmer, low heat) for about an hour,  and you are ready to grill!

The brats will cook fast, so a high heat just to char the outside is all you need!  I am sorry I do not have a picture, but I used a Grill Pan.  One of those pans that have a whole bunch of holes in them.  Any store with lots of grilling supplies will have them.  they are very handy for getting all of the benefits of grilling for small items, sliced vegetables, and these brat slices.

Make another bed of Onions in the pan, drizzle some olive oil to coat, add the meatballs, and grill over direct high heat until the meatballs begin to char on the outside.  Stir to get all sides charred, serve immediately as an appetizer dish to feed your guests while you work on the last minute details for the meal...

Serve HOT and ENJOY!

So,  I am also adding to my Growing list of  "52 Cooking With BEER Recipes"!!!

Everyone knows about cooking with wine, but BEER has so much more complex flavors.  I imagine the day after beer was invented, someone made an Irish Stew. Cooking with beer infuses recipes with this intoxicating concoction of hops and barley in an effort to enhance and enrich everyday food..  Come take a look, sure to have something you might like to try.  All recipes have been tested and WORK!

Creamy Dilly Broccoli Slaw - Church PotLuck Side Dish

Pin It Now!

Some days you need an easy FAST dish that you can still pass off as homemade.

This is the first post of probably a dozen that I will be doing for the menu from my recent BIG ((a dozen guests) with 10 dishes... plus drinks and a fresh made BBQ sauce)... BIG Labor Day BBQ Party!  This would indeed make a great dish to take to a Church PotLuck, big family gathering, any Holiday meal (is it too early to start working on a Thanksgiving menu???).

Of course, the taste is fantastic and the ease is amazing (5 minute assembly time) but there is one big advantage, especially for that big BBQ is that the dish takes best when it has a chance to sit several hours or even over night.  Time for the spices to mix and mingle and flavor everything.  Any dishes you can complete in advance gives you that much time to work on the dishes that need attention closer to serving time.

For the BBQ I garnished with Jalapeno pepper slices (mostly for color).  If I were taking this for a PotLuck, I would probably leave them out.

The "Main" Ingredient is a bag of store bought Broccoli Slaw mix.  Let them do all that slicing.  So all you have to do is measure a few ingredients and mix.  The best side dishes are always the ones you can make the day before...

OK... Here's what I Did...

Creamy
Dilly Broccoli Slaw

Ingredients
  • 1 Package Broccoli Slaw
  • 3/4 Cup Mayonaise
  • Zest and Juice of 1 Medium Lime
  • 1 TBS Olive Oil
  • 1/4 Cup Fresh chopped Dill (can use dry herbs if needed)
  • 2 TBS Sugar
  • 1 tsp Salt
  • 1 tsp Cumin
  • For Garnish, Optional, thinly sliced Jalapeno Pepper
  • For Garnish, pinch of sweet Paprika
  • For Garnish, 1 tsp of dried Chives
Cooking Directions
  1. Whisk together the Mayo, Lime zest and Juice and Olive Oil.
  2. Add the spices
  3. Mix the Broccoli Slaw with the wet ingredients to coat.
  4. Chill in the refrigerator for several hours to allow the flavors to mingle
  5. Garnish with thin Jalapeno pepper slices, Chives and a pinch of Sweet Paprika
  6. Serve Chilled and ENJOY!!!
The first of a full week of posts from my BIG Labor Day BBQ... A dozen guests and 10 Dishes (plus drinks and a homemade BBQ Sauce)... Keep coming back for more this week!

This recipe has been added to my growing list of "52 Church PotLuck Dishes"!

A list of something NEW worthy of being shown off at a neighborhood BYODish (Bring Your Own Dish) Party, a Family special occasion dinner, Any Big Holiday Gathering or of course that glorious day when you bring a dish to share with your Church family...

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy

Elote - Mexican Grilled Corn on the Cob - Grilling Time Side Dish

Pin It Now!

It's Old School and simple on the grill...

Yesterday I posted a really terrific Hamburger, the Summer Tomato Burger.  This is what I served as a side dish.

Elote is a common Mexican street vendor food.  the corn is boiled and customers add a variety of toppings.  I decided to grill mine (since I had the grill fired up for the burgers), but the idea is basically the same.  I was doing a couple of hours of prep work for a big end of summer BBQ I was hosting for Labor Day.  This quickie side dish was perfect for a fast grill session.  The whole meal was done in about 15 minutes!

And of course, DELICIOUS!

OK... Here's what I did...

Elote - Grilled
Mexican Corn on the Cob

Ingredients
  • 4 Cobs of Corn
  • 1/2 Cup Mayonnaise
  • Zest of 1 Medium Lime
  • Juice of 1 Medium Lime
  • 1/2 Cup Cotija Cheese, grated
  • Optional, Cayenne pepper to taste
Cooking Directions
  1. 30 minutes before you start to grill, remove husks and hair from the corn, soak in cold water up to 1 hour.
  2. Over direct medium heat, put corn on the grill, turn 1/4 turn every three minutes.
  3. Meanwhile, mix the Mayonnaise and the juice of a lime.
  4. After 12 minutes, the corn is cooked through and grill marks have formed on the corn. Generously spread 1/4 of the mayo/lime mix on the hot corn, covering evenly
  5. Garnish with the Lime Zest, Grated Cheese and optional pepper spice.
  6. Serve HOT and ENJOY!

KISS Grilled BBQ Glazed Pork Chops Keeping it Simple - Grilling Time Main Dish

Pin It Now!

K.I.S.S. - Keep It Simple Stupid.

And that really is what grilling is all about.  The most basic of cooking methods.  Little fire, little meat and grunt grunt grunt, you have dinner.

But there are a few simple tips that will guarantee a succulent juicy fork tender delicious pork chop off the grill.

Keep scrolling down for this easy to follow tutorial...

First... BRINE your Pork... Even a short time (30 minutes) will help, but preferably you can brine for about 2-3 hours.  I did a detailed post with photo how to hints on getting that butterfly look, and there is a simple brine recipe.  Just water, sugar, salt and a few peppercorn is all the ingredients you need (see, SIMPLE).

Second... Simple Seasonings... I just use Salt, Fresh ground Pepper and a drizzle of Olive Oil.  That is all you need, really.  Let the meat flavor shine!

Third... Cooking Time, 3 Minutes, 4 times... First, of course preheat your grill to HOT HOT HOT.  Plop down the meat and DO NOT TOUCH IT.  To get those beautiful grill marks you need to just let the meat rest.  By the time the meat is charred (3 minutes) where it touches the grill, nothing sticks and you are ready to rotate the meat (not flip, turn) 90 degrees to get the other half of the diamond shaped grill marks that PRO grillers always have.  Let this cook HOT for another (3 minutes).  Now flip and repeat (3 minutes) , turn and Cook, (3 minutes).  That's all it takes, 12 minutes for these beauties and they are cooked perfect every time with those beautiful grill marks.

And Finally... The Glaze... And this is VERY IMPORTANT, only glaze your pork during the last 3 minutes.  Every store bought BBQ sauce has lots of sugar in the mix.  This sugar is delicious when it caramelizes, which only takes a few minutes and TERRIBLE when it burns and it would burn in 12 minutes.  So just a simple brush of the meat and let it cook for a few minutes to bring out the extra flavor of the glaze, but be careful to not get a burnt taste.

While these tips are indeed VERY VERY simple, feel free to show off with your BBQ side dishes.  For this meal I made a salad of Tomatoes with Roasted Garlic, Olives and Pearl Mozzarella... Beautiful seasonably fresh and can be made a day ahead of time.  I also made  a Sweet Heat Pickled Potato Salad.  Again, easy and is best when made a day ahead of time.  And finally I goosed up a vegetable dish with a FANTASTIC OLD SCHOOL dish, Taco Doritos Corn Salad (Relish/Salsa/Dip)!  And once again... delicious and can be made several hours ahead of time... All these dishes and the only thing I actually made in front of my guests was the Chops

And that is my real tip... Keep It All Simple

Now that's a BBQ fit for a holiday!
