Breakfast casseroles seem to be popping up all over the internet this time of year. Mostly as a suggestion when you have company for the holidays. After all, easy to prepare in advance and convenient to serve, keep warm and then serve again.
This one has it all... Meat (pound of sausage), vegetables (onions and peppers), Potatoes (Kids love anything with Tater Tots), Eggs (dozen servings, a dozen eggs) and plenty of cheese to get that delicious crust of cheese on the top. A crowd pleaser for any crowd!
If you think about this, squint your eyes a little, this is simply a form of a quiche and a form of a savory bread pudding. All the right ingredients, simply arranged in a different order. The Eggs mix and mingle with the potatoes. Some mingle down into the meat mix so it is all held together.
There is one tip, the frozen potatoes hold a lot of water. So when the casserole is finished you will need to carefully pierce an edge of the cheese and turn upside down so you can drain the water before serving. I just held the crusty top with a towel and everything stayed in place just fine.
As to taste... Wonderful! Cheesy taters and eggy breakfast meat... A dish fit for family, visitors... even could be a surprise addition to that Church PotLuck table... Betcha no one would complain about breakfast at lunch time!
OK... Here's what I did...

Ingredients
- 1 Pound Bulk Sausage, Browned and fat drained
- 1 Small Onion, Diced
- 2 Red or Green Bell Peppers, Diced
- (Optional) 2 TBS Cajun Spice mix (store bought or make your own)
- 12 Large Eggs
- 1/2 Cup Half and Half
- 1 Bag Frozen Tater Tots, enough to make a singe layer on top
- 2 Cups Monterey Jack Cheese, Grated, Buy the brick and grate as needed
- Salt and Pepper to Taste to Taste
- Preheat Oven to 350 degrees
- In a large Saute Pan, brown the sausage. Cook until just lightly browned and most fo the fat has rendered. Drain the fat, add the diced onions and peppers, saute for an additional 5 minutes. Add optional Cajun seasonings and stir to mix.
- Move this to 13X9 Casserole Dish, cover with a layer of Tater Tots.
- Whisk together Eggs and 1/2 and 1/2 ... season with Salt and Pepper.
- Pour this eggy mix evenly over the Tater Tots. Cover this with a layer of the cheese
- Bake for 1 hour
- Serve WARM and ENJOY!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,
"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church. Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
