EGGNOG TRUFFLES my WOW Cookie for Christmas

Oh Boy Truffles!

But not just any truffles, these are the now legendary Christmas Truffles (although, as Scrooge, after he changed, proclaimed that he would keep Christmas in his heart all year round... And he was as good as his word, so maybe he had his housekeeper make up a batch in the middle of summer just to inspire a little Christmas magic in July... But I digress).

These are now my GOTO Christmas Cookie.  Soft center (think fudge), with a thin coating of white chocolate.  But best of all, this has the unmistakable tastes of that seasonal beverage... EGG NOG.

Please note, the photos are of chocolates made in a chocolate mold.  Not very difficult to do, but I usually make these in a round truffle shape.  The day I made a dozen "fancy" chocolates I also made 3 dozen small half golf ball sized and shaped truffles.  Unfortunately, I did not get any photos of them.  So you will just need to imagine the molded chocolates as round easier to make truffles.

I took these to an after church event and they flew off the shelf.  By far the most popular of the holiday chocolates I made.

And really, Yo Ho Ho and a Tablespoon of RUM... What's not to love.

Easy to make, no bake and delicious!

OK... Here's what I did...

EggNog White Chocolate Truffles

Ingredients
  • 1/3 Cup EggNog
  • 1/4 Cup (1/2 a Stick) Butter
  • 1 TBS Rum (Clear Rum so that the Rum Does not Affect Color)
    Note: Can substitute 1 tsp Rum Flavoring
  • A large Pinch Netmeg
  • 1 Bag (12 Ounces) White Chocolate Chips
  • 1 Cup Powdered Sugar
  • 12 Ounces White Chocolate Candy melt
    Note: I LOVE Ghirardelli brandy Candy Melts for this, or
    Can substitute White Almond Bark 
Cooking Directions
  1. Line large baking sheet with waxed paper; set aside.
  2. Combine eggnog, butter, rum and nutmeg in 2-quart saucepan. Cook over medium-low heat 4-5 minutes or until butter is melted. Add white chocolate chips; continue cooking, stirring constantly, 2-3 minutes or until chips are melted and mixture is smooth. Cover; refrigerate at least 2 hours or until firm.
  3. Dust hands with powdered sugar. Shape mixture, working quickly, into 1-inch balls. Truffle mixture will be soft. Repeat dusting hands with powdered sugar to make shaping easier, if necessary. Place balls onto prepared baking sheet; refrigerate at least 1 hour until firm.
  4. Melt candy coating in deep 1-quart saucepan over low heat; stir 8-10 minutes or until smooth. Remove from heat; cool 10 minutes.
  5. One ball at a time, Skewer Half way into a ball with a Toothpick.  Dip 4/5ths of the balls into the white chocolate (Just a little bit not covered).  Hold out of the melt for 15 seconds until the melt starts to harden a little.  Place on the waxed paper and remove toothpick.  Just a bit of the chocolate will run forming a "foot" circle of chocolate under the ball.  Repeat with  remaining Balls,  
  6. By the time you finish the balls, reatrting at the first ball you did, holding the ball by it's "Foot", dip the top (the 1/5th of the ball not covered in white chocolate) in the candy melt.  Return to the waxed paper, foot side down.  Repeat with remaining balls
  7. Let cool 30 minutes. 
  8. Store refrigerated in container with tight-fitting lid up to 2 weeks.
  9. Serve Room temperature and ENJOY!

Almond Meltaways Santa Cookies

 Oh Boy Christmas Cookies...

But not just any Christmas cookies, these have a deep Almond Flavoring that just melts in your mouth... Literally,  That's why they are called meltaways!

The Santa look is very easy to make.  M&Ms for the nose, Red Sugar sprinkles for the hat and chocolate chips for eyes.  All topped off with  a mini marshmallow for the tassel of the hat and shredded coconut for the beard.

BTW, take a look at the photo below,,, You can use the same recipe a variety of ways... Don't ice them, bake as a ball to get a half dome look.  Lots of Almond flavor but less sugar, less sweet.

Just Ice them... Add a little Almond Extract to the icing for even more Almond flavor.

or

Before baking, roll the balls in Decorator Sugar Crystals , flatten with a cup and bake normally.

One recipe... 4 TERRIFIC COOKIES!


 OK... Here's what I did...

Almond Meltaways
Santa Cookies

Ingredients
  • 3 Cups Flour
  • 1 tsp Baking Powder
  • 1 TBS Mayonnaise
  • Pinch Sea Salt
  • 1 Cup (2 Sticks) Butter, Softened to room temperature
  • 1-1/4 Cup Sugar
  • 2 Large Eggs
  • 3 tsp Almond Extract
  • FOR THE SANTA FACE
    Red Sugar Sprinkles
  • Buttercream Frosting (I used canned)
  • Chocolate Chips
  • Sweet Shredded Coconut
  • Red MandMs
  • Mini Marshmallows
Cooking Directions
  1. Preheat oven to 375 degrees,  Prepare a cookie sheet with nonstick parchment paper
  2. In a large bowl, whisk together the dry ingredients... Flour, Salt and Baking Powder
  3. In the bowl of a stand mixer, creamy together the butter and the sugar.  When light and fluffy, add the eggs and the Almond Extract
  4. Fold in the wet ingredients with the dry and continue to fold until fully combined into a dough.
  5. Working in batches, Roll the dough into 1 TBS Balls.  Arrange on the cookie sheet.  Flatten each into thin discs.
  6. Bake for 8 minutes. The cookies will not look browned or cooked, but they are! Remove from oven and let cookies rest on baking sheet for 5 minutes. Then transfer to a wire rack to cool completely
  7. Ice each cookie
  8. Decorate to form the face...  Shredded coconut for the beard, Red Sugar sprinkles for the hat, Chocolate Chips for the eyes and a red button nose made from MandMs
  9. Store in air tight container
  10. Serve with a Cold Mug of Milk and ENJOY!

Never Fail Fudge - Grandma's "Old School" Recipe

 Oh BOY FUDGE!!!

But not just any fudge, this is the fudge of your youth.  This is the fudge Grandma made every Holiday season.  SO sweet it makes your teeth ache.  But so good you just can;t resist another piece.

This fudge is also the fudge that stays soft and chewy.  It is NOT the fudge of your great grandmother's.  You know that hard as a rock fudge that will melt in your mouth... eventually.

No, this is the fudge that is soft and will indeed be memorable for all the right reasons.

And easy.  It is called never fail because it... Never Ever Ever Never fails to work perfectly.

Destined to be remembered and asked for by your Grand Children...

 OK... Here's what I did...

Never Fail Fudge
Grandma's "Old School"
Recipe

Ingredients
  • 2-1/2 Cups Sugar
  • 1 Small can Evaporated Milk (6 Oz)
  • 2 TBS Butter
  • 1/2 the Jar (6 Ounces, about a cup) Marshmallow Fluff (marshmallow cream)
  • 1/2 tsp salt
  • 1 tsp Vanilla
  • 1-1/2 Cup Chocolate Chips
Cooking Directions
  1. Prepare a 9X9 pan with non-stick spray
  2. Combine sugar, evaporated milk, butter, marshmallow fluff and salt in a 6-quart saucepan.
  3. Cook over medium heat.
  4. Boil slowly for 5 minutes, stirring constantly.
  5. Remove from heat and stir in vanilla extract and chocolate chips.
  6. Pour into prepared pan.
  7. Allow to cool to room temperature
  8. Slice, serve
    ... and ENJOY!

Chocolate Dipped Spoons - 52 Cookie Recipes

Easy and beyond easy...

Melt - Dip - Add Toppings - Chill slightly and

ENJOY!

These are wonderful party items.  You can top them easily enough with almost anything you have left over from holiday baking.

I like the Pomegranate seeds, mostly for the holiday colors, nuts, holiday sugar cookie decorations...

But feel free to let your imagination run wild...

Try some BACON BITS!  Really!

Or butterscotch bits, ground up candy bars (Butterfinger or toffee bars)...

How about mini marshmallows and ground up bits of graham crackers (S'mores on a spoon)...

But really... Try BACON!


 OK... Here's what I did...


Chocolate Dipped Spoons


Ingredients
  • 1 Cup Dark Chocolate Melting Dots
  • 30 Plastic Disposable Spoons
  • Assorted "Toppings" Suggested - Pomegranate Seeds, Almond bits (any nut works), Decorating Sugar, Try BACON BITS!, White Chocolate Drizzle, Dried Fruit, Candied Ginger... Let you imagination go WILD!
  • Parchment (or waxed) Paper
Cooking Directions
  1. Melt Chocolate. I like to use the microwave, 15 second bursts, stir repeat until smooth and creamy. This took me 3-1/2 "bursts".
  2. Arrange a sheet of waxed paper on a counter and assemble your spoons and toppings.
  3. Dip spoon in melted chocolate. Allow excess to drip off, wave a bot to start the cooling and setting process. add toppings while the chocolate is still wet and press in just a bit. Best to do this in batches of 5 so the chocolate does not set too soon and the fixins' do not stick.
  4. Allow to harden.
  5. Serve slightly chilled and ENJOY!

Pretzel White Chocolate Christmas Trees - 52 Holiday Cookies Snacks for Children's Church

Everybody loved the rustic look of these!

The kids love anything chocolate (even white chocolate), Christmas themed and MandMs!

I loved the ease of making them!  No bake, simply melt some white chocolate (I LOVE the new candy melting discs).  Color and do a little simple piping.  A piping bag and tip makes these easy but if you don't have one of those, you can just fill a ziplock bag and snip one corner.

Then design away to match the photos.  Add a trunk (Salty crunchy pretzel) and some ornaments (MandMs) and a bit of time for the chocolate to harden and...

Viola!

And...

Enjoy!


 OK... Here's what I did...


Pretzel White Chocolate Christmas Trees


Ingredients
  • 2 Cups White Chocolate Melting Candy discs
  • Green Food Coloring, As needed for desired color
  • 24 Small Pretzel Sticks
  • Big Bag of MandM's (Christmas Colors work best)
Cooking Directions
  1. Melt the candy according to the directions on teh bag. I prefer the Microwave method, pour the chips into a microwave safe bowl, zap for 15 seconds, stir and repeat until everything is smooth. Be carful to NOT overcook as white chocolate burns easily.
  2. Add Green food coloring until you reach the desired color.
  3. Spread a sheet of parchment paper (or waxed paper). Transfer the colored melted chocolate into a piping bag with a round tip (or a ziplock plastic bag sealed with as much air as possible squeezed out and one corner snipped off).
  4. Form a triangle and a straight line from one tip through the base of the triangle and continuing below the base for an inch. Make 6 at a time but work fast you need to finish before the chocolate hardens.
  5. Press a pretzel into the line (the trunk).
  6. Now make a zig zag patern in the triangle to fill in the tree.
  7. Add MandMs to look like Ornaments.
  8. Repeat until the chocolate runs out.
  9. Allow to sit for an hour (in the fridge if possible) until the chocolate hardens.
  10. Serve to the kids with a mug of Hot Chocolate and ENJOY!

BANG - POW - ZOOM Burst of Flavor CRINKLE COOKIES - 52 Cookie Recipes

I call these my BANG - POW - ZOOM Burst of Flavor Crinkle Cookies for a good reason...

These have a tremendous amount of flavor that bursts in your mouth.

Deceptively flavorful as they resemble the Crinkle Cake Cookies that have been floating around the internet (Often called "How the Grinch Stole Christmas Cookies").  And indeed they have the exact EASY EASY EASY recipe (Store bought cake mix, mixed with egg and butter, drop in powdered sugar mixed with Corn Starch and bake).  BUT the difference here is the flavoring and coloring ingredient.  Just as simple... Add a box of Jell-o.

Red raspberry for the red crinkle and Lime for the Green.

No need to add food coloring, no need for special flavoring drops and no more boring average tasting cookies.  these BURST with an almost neon color (pretty for the holidays) with an equal BURST of flavor that makes these shine.

If you loved the old crinkle cookie recipe because of it's ease, You will go nuts for this BANG - POW - ZOOM Burst of Flavor Crinkle Cookies recipe.  A worthy addition to anyone's Christmas box of cookies!


 OK... Here's what I did...

Crinkle Cake Cookies


Ingredients
  • 1 standard Cake Mix (store bought box)
  • 6 TBS Butter, melted
  • 2 Large Eggs
  • 1 Package RED Raspberry Jell-o
    plus/or 1 Package GREEN Lime Jell-o
  • 1 Cup Powdered Sugar
  • 1 tsp Corn Starch
Cooking Directions
  1. Preheat the oven to 375°.
  2. Melt the butter, allow to cool
  3. In a shallow dish, mix together the powdered sugar and cornstarch.
  4. In a large bowl, mix together the butter, cake mix and eggs.
  5. Divide this dough in half, Add the red Jell-o to one half and mix thoroughly.  Add the green jell-o to the remaining half and mix equally thoroughly.
  6. Form into 1 TBS Size Balls
  7. Roll the balls in the powdered sugar/Corn Starch mix and coat well
  8. arrange on a cookie sheet lined with parchment paper
  9. Bake for 8 minutes in pre-heated oven.
  10. Allow to cool on the baking sheet for one minute, then move to cooling rack.
  11. Serve with a glass of milk and ENJOY!!!

The instructions are a little long winded, mix, roll in a ball, coat in powdered sugar and drop the ball on the parchment paper... bake and the crinkles are formed in the oven... Easy as can be!!!

EASIEST NO BAKE CHRISTMAS COOKIE EVER - Nutter Butter Santa Cookies! - 52 Cookie Recipes

Cookies for the lazy cook... These are so easy.  They do take a while because you have to wait for the first half (the beard half) to harden and cool before you can redip the cookie to make the hat half.  But that is just waiting time and not really hands on cooking time.

The star of the cookie are NUTTER BUTTER COOKIES.  The ones shaped like a peanut.

I made these as part of my commitment to make a snack for my Church's Children's Church and they were wildly popular (What's not to love?).

Cute as heck, easy to make and they taste very KID FRIENDLY!

 OK... Here's what I did...


Nutter Butter Santa Cookies!


Ingredients
  • 30 Nutter Butter Brand Cookies
  • 1 Package White Chocolate Chips (or White Chocolate Melting discs)
  • 30 Red MandMs for the mouth
  • 60 Mini Chocolate Chips for the eyes
  • Sprinkles of Red Sugar
  • 30 White Chocolate Chips for the ball on the end of the hat
Cooking Directions
  1. Melt the White Chocolate in the microwave. WARNING, white chocolate burns easy and seizes up (if it does, add a couple tsp of cream and reheat). Melt the white chocolate 15 seconds at a time, stir and repeat. DO NOT OVER HEAT. As you stir, bits of un-melted chocolate will melt.  It took me 3 ZAPS to melt the lot.
  2. Dip each cookie to coat 2/5ths of one end (to make the beard). Set on a sheet of waxed paper, Add a red MandM for the mouth and allow to cool (refrigerate if you like) until coating is cool and solid.
  3. Once solid, repeat with the opposite end, 2/5ths coated for the hat. Place on a sheet of waxed paper. Sprinkle the red sugar on the new (still wet part) and add a white chocolate chip to look like the ball on a hat.
  4. Allow to cool, harden and serve with a cold glass of milk and ENJOY!

Lemon Zest Lemon Sugar Cookies - 52 Cookie Recipes

Hands down, these are my very favorite cookies.

The extra zip zing of lemon paired with the sweetness of the sugar cookies makes these a crowd favorite.  I especially love to serve these at a catering event.  Guaranteed crowd pleaser!

And there is a secret...

Lemon Sugar!

I did a post on how to make your own Lemon Sugar.  It only takes a couple of extra minutes but it makes a world of difference in the taste.

The short version, 1 cup of sugar mixed with the zest of 1 or 2 lemons.  But don't just mix, combine everything in a bowl and then, using your fingers, press the sugar into the sugar.  the zest is wet and will stick easily to the sugar.

That zip zing, something something that any cook wants their dishes to have really shines in these.

The texture is extra soft, melt in your mouth.

Taste and texture, the perfect sugar cookie.  A grown up taste that earns respect for a humble little gem of a cookie!


 OK... Here's what I did...

Lemon Zest Lemon
Sugar Cookies 

Ingredients
  • 2 Sticks (1 Cups) Butter, Softened
  • 2 Cups Lemon Sugar (mix 2 Cups Sugar with the zest of 3 Lemons)
  • 2 Large Eggs
  • 1 tsp Lemon Extract
  • Zest from 2 Large Lemons
  • Juice from 1 Large Lemons
  • 2-1/4 Cups Flour
  • 1 tsp Baking Powder
  • 1 tsp Sea Salt
Cooking Directions
  1. Preheat oven to 350 degrees, Line cookie sheets with parchment papers
  2. Cream Together Butter and Lemon Sugar until light and fluffy, about 5 minutes in a stand mixer with the paddle attachment.
  3. Add the Lemon Extract, Juice and Zest from the lemons and the Eggs (one at a time). Continue to mix for another minute until thoroughly mixed.
  4. In a separate bowl, mix together Baking Powder, Sea Salt and the Flour.
  5. Combine the wet ingredients with the dry. Fold together. Mix until just combined, do not over mix.
  6. Use a 1 TBS size scoop and make uniform size "balls" of cookie dough. Place on Cookie Sheet about 2 inches apart. Take the back of a spoon and lightly press down on each cookie.
  7. Bake for 12 minutes until just barely starting to brown.
  8. Allow to cool for 3 minutes on the cookie sheets before moving to a cooling rack. Store in an airtight container.
  9. Serve with a Cup of tea, coffee or Ice Cold Glass of Milk and ENJOY!
