Candy Sriracha Heat Sweet Bacon Wrapped Pineapple

 Oh Boy, Bacon wrapped anything!

But this isn't just any bacon wrapped appetizer.  This is my very favorite bacon wrapped appetizer I made this year.  Hands down, these are terrific.


The Sriracha sauce is sweetened with a bit of Brown Sugar.  This adds a bit of heat/sweet candy/hot flavor to the bacon.  Sriracha, of course, is that beautiful colored amazingly spiced hot sauce with the famous rooster logo.  Those in the know think Sriracha is among the best of it's kind, with a following in the hundreds of followers that worship at the altar if Sriracha!

The naturally sweetness of the pineapple is ramped up as the bacon cooks around each piece.  Making this hot, sweet, spicy, juicy amazing combination nearly that one perfect bite!

I served up a platter of these at a recent party along with a couple other platters of appetizers.  BY FAR these were the first empty plate.   People loved the combination of tastes as this became the talk of the party with many requests for the much too easy recipe.

There is one suggested product that will make these taste better, with a crispy texture all around.  In the past I have lined a baking sheet with crumbled aluminum foil.  This way the bacon wrapped wonders sit of the ridges while the bacon drippings flowed.  Inevitably, the bottom of the bacon wrapped wonders will sit in the grease as they cool, making for an uneven texture.  Recently I bought a naking sheet with a grid that sits in the dish keeping these beauties out of the drippings.  I love this addition to my pantry and could not recommend this more...

  OK... Here's what I did...

Candy Sriracha
Heat Sweet Bacon Wrapped Pineapple

Ingredients
  • 1 small can Pineapple Chunks, drained, each chunk cut into 3 equal sice pieces... 36 total pieces
  • 12 slices Bacon, each slice cut into 3 equal size pieces
  • 1 Cup Sriracha Brand hot sauce
  • 1/2 Cup Brown Sugar
  • 36 decorative toothpicks
Cooking Directions
  1. Preheat oven to 350 degrees.
  2. Cut each bacon strip into 3 equal size pieces.
  3. Line a cookie sheet with foil and place a cooling rack on top of the pan. This will allow the bacon to crisp on all sides.
  4. Mix the Sriracha Sauce with the brown sugar.
  5. Dip each of the bacon pieces in the Sweetened Sriracha Sauce as you...
  6. Wrap each Pineapple piece in one of the cut dipped bacon pieces.  Bacon will overlap by a fraction of an inch.
  7. Place the tot seam side down on the wire rack.  Repeat with remaining bacon, sauce and pineapple.
  8. Bake for 20 minutes, check the crispiness of the bacon (I check the color).  Continue to bake at 5 minute intervals until the bacon is a beautiful crispy cooked bacon color.  Watch carefully as the added brown sugar will burn if cooked too long (A little crispy bit is perfect, call it caramelized.
  9. Add an attractive toothpick to each and arrange decoratively on a serving platter.
  10. Serve warm and ENJOY!

Cloink Balls (Chicken and BACON) for a Pass a Plate Appetizer Party

This is a bit of a new presentation for a great little appetizer.

More commonly these beauties are made with a frozen meatball and wrapped in bacon.  Grillmasters love to serve these as appetizers at a back yard BBQ in the summer.  Here's a presentation idea that almost makes them classy enough for a Party!  Dig out your Grandmother's Deviled Egg Presentation plate.  The divots are a great way to add an individual dipping sauce without the need for a dipping bowl.  It may not be dinner at the Vanderbilt's, but it is just a tad classy looking.

Here's the story of the Cloink Ball -

A couple of weeks ago I posted the recipe for the IMPOSSIBLY EASY, INCREDIBLY CHEAP Legendary - MOINK BALLS.  You may remember that MOINK stands for Moo Plus Oink or Beef and Pork.  Beef meatballs wrapped in pork bacon.

When I wrote the post I started speculating about the other combinations...

There are dozens of variations, Chicken Meatballs (Cloinks?), Pork Meatballs (the Oink-Oink), add a piece of pineapple for the Hawaiian Moink or even Turkey Bacon with Vegetarian Meatballs (The Veggie Gobbler).
Sprinkle a spice rub on them for spicey balls, brush with the dipping sauce as a glaze during the last 10 minutes of cooking for that glowing wet look ball.

You can bake them, grill them or even use that toaster oven!

Here's the basic recipe... now just imagine your interpretation!


Well, here you go.  I was wandering around the store looking for bargains the other day.  I found a package of beautiful Artisan chicken brats.  They were fresh made a few days ago but the shelf life had dropped to "Must Cook within 2 Days"... So I did.

These taste much different than the Moink Ball.  While I love the Moink Ball, they do have a processed taste (remember, we used frozen pre-cooked meatballs).

These have a much more premium taste with the artisan sausage.  Definitely an upgrade.


 OK... Here's what I did...

CLOINK Balls
Bacon (Oink) Wrapped Chicken Sausage (Cluck)
Cluck and Oink - Cloink

Ingredients
  • 6 Chicken Sausage Brats each brat cut into 4 pieces, each piece the width of a Bacon Slice (24 total "Balls"
  • 12 Slices Bacon (Cut in Half)
  • 24 Wooden Toothpicks
  • FOR THE SAUCE
  • 1/4 Cup of your favorite BBQ Sauce
  • 1/4 Cup Grape Jelly
Cooking Directions
  1. Prepare the CLoink Balls, Wrap each Piece of Chicken Brat (hereafter, called a Meatball) in a Half piece of Bacon. 
  2. Arrange on a wire rack on a rimmed cookie sheet (line the cookie sheet with aluminum foil for easy clean up)  The wire rack keeps the balls from sitting in the bacon drippings while cooking
  3. Bake in a preheated 400 degree oven for 15 Minutes (25 minutes if using thick sliced bacon).
  4. Check for doneness.  Balls are done when the bacon is cooked to your likeness.  Continue to bake as needed, but check often to make sure they do not burn
  5. While the balls are cooking, make the sauce. Over medium heat in a small sauce pan, mix the Jelly and BBQ sauce. Stir to evenly mix.
  6. Serve warm, with a cocktail fork inserted in each, with the dipping sauce on the side OR Dip each arrange on a deviled egg presentation dish.  This way the egg cavity becomes it's own dipping sauce bowl
     and of course, ENJOY!

Candy Bacon Tater Tots Appetizers

 OH BOY Bacon wrapped ANYTHING!

But these little gems are not just anything, these have that wonderful combination of Heat (I used a sprinkle of Cajun Spice mix) with the sweat of Candy Bacon.  All that heat/sweet flavor wrapped inside a savory piece of grated potato and BACON!

These beauties will become the most popular and talked about appetizer for your party, pass a plate event, potluck or any big family gathering.  Put out a plate and bang they are gone, leaving that frou frou Foie Gras appetizer your sister-in-law spent hours making in the leftover pile.

May not be fancy, may not be pretty, but flavorful, delicious and at teh end of the night... Gone

Only 4 ingredients, easy and fast to assemble and popular!

 OK... Here's what I did...

Candy Bacon
Tater Tots
Appetizers

Ingredients
  • 36 Frozen Tater Tots
  • 12 slices Bacon
  • 1 Cup Brown Sugar
  • Sprinkle of Cajun Spices (can use Taco Spice, Chili Powder or your favorite BBQ Rub)
Cooking Directions
  1. Preheat oven to 350 degrees.
  2. Cut each bacon strip into 3 equal size pieces.
  3. Line a cookie sheet with foil and place a cooling rack on top of the pan. This will allow the bacon to crisp on all sides.
  4. Wrap each frozen tater tot in one of the cut bacon pieces.  Bacon will overlap by a fraction of an inch.
  5. Roll the wrapped tot in the brown sugar coating all around.
  6. Place the tot seam side down on the wire rack.  Repeat with remaining bacon and tots.
  7. Sprinkle the Spice mix on top of the bacon wrapped tots.
  8. Bake for 20 minutes, check the crispiness of the bacon (I check the color).  Continue to bake at 5 minute intervals until the bacon is a beautiful crispy cooked bacon color.
  9. Serve warm and ENJOY!

Bacon Wrapped Chicken Mini Kabobs Appetizers

OH Boy do I love these... Possibly the best thing I have ever made!

And of course everything is better with BACON!

The chicken is an adaptation of a very simply recipe... Coat each piece of chicken with a mix of mayonnaise and Parmesan cheese.  Wrap with bacon, Grill (or Bake, cooks equally well in an oven), add the pineapple and done!


I do make these on my grill quite often.

They are wonderful appetizers for a party.  Set your grill up as shown in the photo, all the coals set to one side, but the chicken bites on the opposite side.  This way the drippings will not fall into the hot coal causing flair ups.  This set up turns your grill into an oven.  All of the vents open full and the temps will reach 400 degrees plus.  Perfect for cooking bacon.

And one more tip... If you are serving something that needs to be direct grill (Meat over the HOT coals, as opposed to indirect grilling (the above photo showing the bacon wrapped chicken bites)), These are especially a good choice for an appetizer.  When the bites are done, remove them, spread the hot (but cooling by now) coals around to form a single tight layer.  Add some extra coals to add more fire power (about 20 briquettes).  Wait for 10 minutes for the HOT coals to begin to ignite the new layer... Just about the right amount of time to finish setting up the mini kabobs (add pineapple and plate).  Serve these as appetizers while you are grilling the meat (burgers, steaks or the London Broil marinated in Kentucky black BBQ Sauce shown above).  Add a few soda pops (or adult beverages) and the party has started, even while you are still grilling!

An efficient use of coals, efficient use of your time and a great way to keep the party going.

OK... Here's what I did...
Bacon Wrapped Chicken Mini Kabobs Appetizers

Ingredients
  • 12 Slices Thick Cut Bacon, each slice cut in half
  • 2 Large or 3-4 small Chicken Breast, Boneless Skinless, cut into 1 or 2 bite size pieces
  • 1/2 Cup Mayonaisse
  • 1/4 CupFresh grated Parmesan Cheese
  • 1/2 tsp Salt
  • Several turns of a pepper grinder equal to the amount of salt
  • 24 Pineapple Chunks About equal sixe to the cut Chicken pieces
Cooking Directions
  1. To Grill...
    Set up your grill for indirect grilling, high heat.  That is, coals lumped together together on 1/3 of the grill, with none on the remaining side.
    This turns your grill into an oven when the lid is closed with hot air circulating around the Chicken and Bason pieces.  This way the bacon drippings do not drip onto the coals, preventing flair ups and burnt bacon.
  2. To bake in an oven...
    Set oven temperature to 375 degrees.  Prepare a rimmed baking sheet with a baking screen so that the pineapple spears sit above the bottom of the pan.  This keeps the chicken from sitting in the rendered bacon drippings as they cook
  3. Prepare the Chicken pieces.  In a mixing bowl, combine the Mayo and the Parmesan with the salt and pepper.  Stir to evenly mix.  Add the Chicken pieces and fold to evenly coat each piece.
  4. Wrap the bacon slices around the Chicken.  Overlap slightly on the bottom and secure the top with a toothpick.
  5. Arrange on the grill or on the baking sheet.  If grilling, be careful to not have any directly over the coals.  Remember, indirect heating only.  Open all vents fully for high heat, close the lid.
  6. Bake or grill for 20 minutes.  Check desired doneness of the bacon (crispy but not over cooked).  The spears are cooked through when the bacon is fully cooked.
  7. Remove from grill (or oven).  Remove toothpick, set a piece of pineapple and spear both with a new toothpick (Get pretty presentation toothpicks for a fancy party or catering gig).
  8. Serve warm or room temperature and .... ENJOY!

 A Fantastic Appetizer.  The Reuben is a very popular sandwich.  This is that sandwich in a handheld appetizer form.  All the flavors, simple, to make, attractive to serve and popular!

Bacon Wrapped Pineapple Baked in an Oven or Grilled - 52 Appetizers

OH BOY!!!

I have a new grilling obsession.  Possibly the best appetizer...ever!

The pineapple comes out warm and far juicier than a fresh slice.   The flavor is intensified.  The bacon of course adds that Earthy meaty taste.  Everything is better with bacon!

They cook up very easy, simply wrap and heat until the bacon has reached a desired crispiness.  When the bacon looks done... they are done!

These are wonderful to serve up as appetizers for a back yard party.  I recently had a birthday party for a friend.  With a dozen guests, I started the meal with these appetizers.  Then I simply added a few more coals, spread them out over the already HOT and glowing coals.  The existing hot coals started  the new colas.  In about 5 minutes I had plenty of heat to grill hearts of romaine for the salad... that post will come tomorrow.

 OK... Here's what I did...

Bacon Wrapped Pineapple

Ingredients
  • 12 Slices Thick Cut Bacon
  • 12 Pineapple Spears, 2-3 inches long
  • Toothpicks (Soaked in water to keep from burning
Cooking Directions
  1. To Grill...
    Set up your grill for indirect grilling, high heat.  That is, coals lumped together together on 1/3 of the grill, with none on the remaining side.

  4. Wrap the bacon slices around the pineapple.  Overlap slightly on the bottom and secure the top with a toothpick.
  5. Arrange on the grill or on the baking sheet.  If grilling, be careful to not have any directly over the coals.  Remember, indirect heating only.  Open all vents fully for high heat, close the lid.
  6. Bake or grill for 20 minutes.  Check desired doneness of the bacon (crispy but not over cooked).  The spears are cooked through when the bacon is fully cooked.
  7. Serve warm and .... ENJOY!

Bacon Wrapped Brat - 52 Grilling Time Secret Extras

It's FOOTBALL SEASON!!!

It's TAILGATING TIME!

It's time for your offerings to stand out as something SPECIAL!

And of course anythings special when it has BACON BACON BACON!

What could be easier, yet what could be more exciting to serve than a bacon wrapped brat!  Just wrap the brat, secure with toothpicks and bake.  OR GRILL!  Be sure to position on a grill using indirect heat with a pan underneath to catch the drippings.

If you are baking in the oven, be sure to use a pan that allows the drippings to fall below the brats so they are not resting in bacon fat while cooking... Makes the bacon crispier.

And the beauty is how easy it is to tell when they are cooked.  Ideally, 20-25 minutes in a 400 degree oven (or in a grill set up to perform like an oven) and the bacon has a little crisp, and the sausage is cooked through.

Like they were made for each other.

And if you really want to stand out, make some fresh pickle relish (come back in a couple days for that recipe) and even bake your own hot dog buns using a quick and easy Hawaiian Roll recipe that is made Bread Machine EASY (Again, post to be done in a couple days)!

You will be the KING of the TAILGATE CROWD!!!


 OK... Here's what I did...


Bacon Wrapped Brat


Ingredients
  • 6 Top Quality Brats (I love Johnsonville Brats)
  • 6 Slices Thick Cut Bacon
  • 12 toothpicks to secure brats while cooking
  • 6 Top Quality Hot Dog Buns (I made Bread Machine Hawaiian Roll Buns)
  • Garnish with Condiments, Ketchup BBQ Sauce, Fresh Made Pickle relish, Mustard, Etc...)
Cooking Directions
  1. Preheat oven to 400 degrees.
  2. Wrap each brat with a slice of Bacon, Secure with toothpicks          
  3. Arrange each bacon wrapped brat on an oven safe grate over a jelly roll pan (cookie sheet with a lip around to catch the dripping bacon grease).
  4. Bake for 25 minutes until the bacon has browned and turned a bit crispy.
  5. OR, if you are grilling, set your grill up for indirect heat (Coals on one side, no coals on the other with a drip pan half filled with water). Arrange the bacon wrapped brats over the drip pan, close the lid and adjust the vents so the internal temperature in the grill is about 400-450 degrees. Leave the lid closed for about 25 minutes and the brats will be "baked" in the grill used like an oven.
  6. Remove toothpicks
  7. Serve HOT in buns with your favorite condiments and ENJOY!

Moink Balls - IMPOSSIBLY EASY Bacon Wrapped Meatball appetizers - 52 SIMPLE Appetizer Recipes

This is sooooo simple.  SO simple that my long supportive wife, when told that today's post was going to be "Moink Balls", her response was a snort, a laugh and the comment, "What, you going to just tell the folks to go to the store and buy a bag of meatballs"?.

Well, seriously, first step, go to the store and buy a bag of pre-cooked frozen beef meatballs.

Told you this was going to be simple.

First, the MOINK (Beef Meatballs (MOO) Plus Pork Bacon (OINK) = MOINK) Balls have been around for a very long time.  I did just a quick search for the original recipe and couldn't find the genius behind them.  I guess they are too simple to have a single inventor.  This is the classic recipe I learned, just a meatball, wrapped in Bacon with a sweet BBQ dipping sauce.  there are dozens of variations, Chicken Meatballs (Cloinks?), Pork Meatballs (the Oink-Oink), add a piece of pineapple for the Hawaiian Moik or even Turkey Bacon with Vegetarian Meatballs (The Veggie Gobbler).

Here's the basic recipe... now just imagine your interpretation!


OK... Here's what I did...


Moink Balls


Ingredients
  • 24 Precooked Frozen Beef Meatballs (Thawed)
  • 12 Slices Thick Cut Bacon (Cut in Half)
  • 24 Wooden Toothpicks
  • FOR THE DIPPING SAUCE
  • 1/4 Cup of your favorite BBQ Sauce
  • 1/4 Cup Grape Jelly
Cooking Directions
  1. Prepare the Moink Balls, Wrap each Meatball in a Half piece of Bacon. Thick sliced bacon works best, but you can use thin if you like.
  2. Secure the Bacon to the Meatball with a toothpick. I like to just push the toothpick only half way in so at least half stick out, creating a Moink Lollipop! Hint: Soak the wood in water for an hour before cooking to keep them from catching fire while cooking.
  3. Bake in a preheated 400 degree oven for 25 Minutes (15 minutes if using thin sliced bacon).
  4. OR... Grill! Set your grill up for indirect grilling (Coals bunched on one side, a pan with water under the area NOT heated by the coals). Coals should be medium high HOT, making the temperature under the dome about 400-450 degrees. Arrange the Moink Balls over the pan of water (see the photo below), close the lid and check after 20 minutes. Balls are done when the bacon is cooked to your likeness.
  5. While the balls are cooking, make the sauce. Over medium heat in a small sauce pan, mix the Jelly and BBQ sauce. Stir to evenly mix.
  6. Serve Hot with the dipping sauce and ENJOY!
Makes a great appetizer to share while your HAWAIIAN BACON EXPLOSION finishes cooking... But that's a post for another day!

    LOADED Bacon Wrapped Dates - 52 Grilling Time Secret Extras

    I first tried one of these off of a food truck in Tennessee.  LOVED em and have been working on a signature version for awhile.  After a few trials and errors I came up with this combination of the sweet dates, the savory tomato pesto, a spicy Pecan surprise in the center surrounded by creamy cheesy goodness and all wrapped up inside BACON BACON BACON!

    Delicious and easy to fit into any BBQ, Burgers and dogs or a multi course extravaganza!

    All the prep work and assembly can be done hours in advance so you can just toss on the grill, cook and serve.  These are small enough you can just add around whatever you have cooking.

    Fantastic little appetizers.  I try to pull them from the grill same time I am "resting" my meat so everyone has an appetiser to chew on while waiting.

    But make enough, they are WONDERFUL and it is hard to stop at just one.


    OK... Here's what I did...

    Bacon Wrapped Dates


    Ingredients
    • FOR The SPICED PECANS
    • 2 TBS Butter
    • 12 Pecan Halves, Do not get pieces, as big and whole as you can find
    • 1/2 tsp Salt
    • 1/2 tsp Cayenne Pepper
    • FOR The FINISHED DATES
    • 12 Medjool Dates
    • 4 Ounces Goat Cheese
    • 4 Ounces SunDried Tomato Pesto
    • 6 Slices Thick Cut Bacon, cut in half
    • Toothpicks or Skewers
    Cooking Directions
    1. Hours before your BBQ, do the prep work... FIRST, make the spiced Pecans...
    2. In a small saute pan, Melt the butter over medium high heat.
    3. Add the pecan halves, salt and cayenne pepper. Reduce heat to low and saute the pecans until they just start to toast, about 10 minutes. STirring occasionally, the pecans will also absorb most of the butter making them slightly soft but still slightly crunchy for texture.
    4. Meanwhile, prepare the remaining ingredients...
    5. Slice each date through just one side so that the seed is exposed but the dates are not cut in half. Just enough to remove seed and open a pocket in the date.
    6. In each date, insert an equal small amount (about a 1/2 tsp each) of the Cheese, sun dried tomato Pesto and one of the finished Spiced Pecans.
    7. Wrap each with the half bacon slices and secure with a toothpick or a long skewer.
    8. Refrigerate until ready to cook.
    9. Over direct heat on your grill, add the wrapped dates. Takes about 10 minutes for them to cook. The dripping bacon grease will cause flare ups so stay close and turn often until all sides of the bacon is cooked. The dates and the stuffing are safe to eat as is, you are just heating them. The dish is finished when the bacon is cooked.
    10. Serve HOT from the grill and ENJOY!!!
