Cheesy Tomato Tortellini Soup - 52 Recipes for Soup

It's that time of year... Turning cold (although in a couple of months, temps in the 40's will seem balmy).  Windy, rainy... The Cold and Flu season.

Time for a bowl of soup!

This soup has the look and taste of a designer soup.  Something that could take hours in the kitchen and the chef would guard the secret ingredients with his life...

But in reality... Pasta Sauce (Fresh Made from scratch or store bought jar), Chicken Stock (Again, Fresh Made (you should always have some in your freezer) or store bought, some simple pantry ingredients and a bag of frozen 4-Cheese Tortellini... 20 minutes later you have SOUP!!!

Simple ingredients but a complex taste.  Stick to your ribs thick and cheesy soup plus the extra flavors and texture of tortellini make this a keeper...

OK... Here's what I did...

Tomato Tortellini Soup


Ingredients
  • 2 Cups Tomato Sauce (fresh made or Store bought (the Pasta Sauce jars))
  • 2 Cups Chicken Stock
  • 1 Cup 1/2 and 1/2
  • 1 Small Can Tomato Paste
  • 8 OZ Shredded Monterey Jack Cheese
  • 1 TBS Onion Powder
  • 1 TBS Garlic Powder
  • Salt and Pepper to Taste
  • 1 Package Frozen 4-Cheese Tortellini (cooked according to directions on the bag)
  • Handful of Parsley Chopped for Color and Garnish
Cooking Directions
  1. In a Ceramic Lined Dutch Oven (or large stock pot), over medium high heat mix together the Tomato Sauce, Chicken Broth and 1/2 and 1/2. Heat until simmering.
  2. Once the soup starts to simmer, start cooking the tortellini according to the directions on the bag.
  3. Add the Tomato Paste, shredded Cheese and spices to the soup and mix until allof the cheese has melted into the soup. Continue to simmer and stir occasionally.
  4. When the Tortellini has finished cooking, drain and add to the soup. Stir to mix.
  5. Add additional salt and pepper as needed.
  6. Serve with crackers (everything tastes better on a Ritz), garnish with chopped Parsley.
  7. Serve HOT and ENJOY!
