Classic ROLO Candy DOUBLE Chocolate Caramel Cookie Soooooo EASY

Old School cookie time again!!!

These were a classic first in England where the candy was invented and and immediate hit in 1969 when the candy came to the US.


The candy looks like an inverted tub, made of chocolate with a 1/2 tsp of Caramel inside.  It makes a perfect "SURPRISE" cookie when you roll them inside chocolate dough ball, bake them so they chocolate and caramel melt inside the dough, leaving an innocent flat looking cookie with a chewy caramel center!  So, Chocolate from the candy and cocoa powder chocolate cookie dough; Double Chocolate plus the soft creamy caramel center!

You can pretty them up a couple of ways.  Rolling the raw dough balls in sugar is the easiest, leaves a glistening shine on them.  I like to melt some chocolate chips in a microwave (slowly, 30 second blasts at 1/2 power until they melt into liquid).  Then dip the tongs of a fork in the chocolate and just flick the fork to get the rustic drizzle look.

These are great cookies to make with kids.  They always like a surprise inside treat.  they really like to be in on the surprise, a great cookie for them to share with Dad or Mom.  It always helps for the parent to act like they have never seen this cookie before.


OK, Here's What I did...


Rolo Cookies


Ingredients
  • 2-1/2 Cups Flour
  • 1 tsp Baking Soda
  • 1 Pinch Salt
  • 1 Cup Butter, Softened to Room Temperature
  • 3/4 Cup Cocoa
  • 1 Cup Sugar
  • 1 Cup Light Brown Sugar
  • 2 Large Eggs, whisked
  • 1-1/2 tsp Vanilla
  • 36 Rolo Candies
  • Sugar For rolling the cookie balls
  • 1/4 Cup White Chocolate Chips, melted for flicking garnish
Cooking Directions
  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or silicone mat. Set aside.
  2. In a Large bowl, sift flour, baking soda, salt, and cocoa. Set aside.
  3. With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract. Mix until blended.
  4. Slowly add flour mixture to sugar mixture and blend well. Take a spoonful of chocolate cookie dough and wrap around one Rolo candy. Make sure Rolo is completely covered with cookie dough. Roll dough ball in sugar and place on prepared baking sheet. Continue until you run out of cookie dough.
  5. Bake cookies for 8 minutes. Remove from oven and let sit on cookie sheet for 3-5 minutes. Move to a cooling rack and cool completely.
  6. Serve with a COLD Glass of Milk and ENJOY!!!
