Chicken Nacho Salad

The challenge to this dish is to label it.  Certainly not really a salad, but there is a bit of lettuce.  But my real problem comes when i try to serve this as an appetizer...  More than once, it has been so popular that the guests chow down on this ruining their appetite for a main course.

I just gave up and make this a meal in itself.  A really filling delicious, salty, spicy, crispy, cheesy, tomato salad... and of course with a serving of my beloved rotisserie chicken, it comes together fast, easy and delightfully satisfying!


Here's what I did...


Chicken Nacho Salad


Ingredients
  • 1 Bag Tortilla CHips
  • 1 head Romaine Lettuce, Chopped
  • 1/2 Pound Bacon, Fried and chopped
  • 1 medium Tomato, Diced
  • 1 ` Jalepeno, Sliced thin, seeds removed (unless you want the dish HOT)
  • `1 Pound Chicken Breast, diced (rotisserie already seasoned)
  • 1/2 Jar Queso Monterrey Jack Cheese, heated
Cooking Directions
  1. Pretty simple, get everything ready and just layer. Use 2/3rds of the ingredients on the first layer and 1/3rd on the second. Start with a bed of chips, add the lettuce, then Chicken and top with the extras. Pour 2/3rds of the cheese...
  2. Repeat with the second layer
  3. Serve and enjoy!

This recipe has been added to my growing list of "52 Uses For a Rotisserie Chicken"  (Now close to 100!)...I am so confused... $5.49 for a fully cooked, fully seasoned Oven Roasted, Rotisserie Chicken. Yet shop in the raw meat department and most raw chickens are at best $8 each and usually far closer to $10. Anyone have an answer??? Me either. So, I can either rail against the machine, or learn to embrace the beauty that is the $5 chicken! In this pin are recipes I have made, and recommend. MORE than 52 (I just can't stop)..
You get the idea.  From Scratch Pizza to Chinese Take Out recipes, Lots of Soups and Chili... Appetizers to Main Courses (Still can't find a dessert, but I am looking).  More than enough ideas for that store nought bird to shine with just a little extra work
