The challenge to this dish is to label it. Certainly not really a salad, but there is a bit of lettuce. But my real problem comes when i try to serve this as an appetizer... More than once, it has been so popular that the guests chow down on this ruining their appetite for a main course.
I just gave up and make this a meal in itself. A really filling delicious, salty, spicy, crispy, cheesy, tomato salad... and of course with a serving of my beloved rotisserie chicken, it comes together fast, easy and delightfully satisfying!
Chicken Nacho Salad
Ingredients
- 1 Bag Tortilla CHips
- 1 head Romaine Lettuce, Chopped
- 1/2 Pound Bacon, Fried and chopped
- 1 medium Tomato, Diced
- 1 ` Jalepeno, Sliced thin, seeds removed (unless you want the dish HOT)
- `1 Pound Chicken Breast, diced (rotisserie already seasoned)
- 1/2 Jar Queso Monterrey Jack Cheese, heated
- Pretty simple, get everything ready and just layer. Use 2/3rds of the ingredients on the first layer and 1/3rd on the second. Start with a bed of chips, add the lettuce, then Chicken and top with the extras. Pour 2/3rds of the cheese...
- Repeat with the second layer
- Serve and enjoy!
