Here it is, almost a full week into spring and I have a fresh layer of half a FOOT of snow on top of my grill.
Sigh...
This is my version of Southern treat called, Smoky Mountain Snowcaps. Looking out on what I pray is the last snowfall of the season, I felt inspired.
These are a chewy almost shortbread texture cookie. Savory and LOADED with Walnuts, Spicy and interestingly flavored with nutmeg and all made pretty (and hinting of snow) by a final dusting of powdered sugar.
A grown up cookie, for grown up tastes and delicious!

OK... Here's what I did...
Walnut White Chocolate Snowcaps
Ingredients
- 8 Oz White Chocolate Chips
- 3/4 Cup Butter, Softened
- 1 Cup Sugar
- 3 Large Eggs
- 1 tsp. Vanilla
- 3-1/2 Cups Flour
- 1 tsp. Baking Powder
- 1 Large Pinch of Salt
- 1 pinch Nutmeg
- 2 Cups Chopped Walnuts
- 1/4 Cup Powdered Sugar for dusting/garnish
- Preheat oven to 350 degrees
- Melt white chocolate chips in a microwave, using 20 second bursts, stirring after each burst until smooth
- In a stand mixer, beat the butter and sugar together until fluffy, about 5 minutes
- Add eggs one at a time, beating until blended after each egg.
- Add vanilla and beat well.
- Add melted white chocolate and beat well.
- Mix the flour, baking powder, salt and nutmeg/ Add this mix to the wet ingredients and mix until just combined
- Add the walnut pieces and stir to even mix
- Drop dough by heaping tablespoons onto parchment paper lined baking sheet
- Bake for 10 minutes.
- Allow to cool on the baking sheet for 2 minutes then transfer to a cooling rack.
- Garnish with a sprinkling of powdered sugar
- Serve WARM with a COLD glass of MILK and ENJOY!!!
