I do LOVE this recipe. A wonderful upgrade to that simple bagged cole slaw that will make your guests think you are truly the master of your domain (the back yard BBQ)!
I have been on a mission lately to post upgrades to that bag of cole slaw you can buy any just about any grocery store. This recipe adds a tropical sweet element to the flavors. Mango and Pineapple, plus some colorful additions, plus a very simple to whisk together mayo slash mustard vinaigrette will have your guests asking for this recipe.

This sandwich can be served cold, or you can prep all of the ingredients in advance, keep the pulled pork warm in a crock pot and assemble the sandwich in minutes just before serving to have something hot.
But the secret is this sweet, crunchy, savory Cole Slaw...

OK... Here's what I did...
Island Lover Tropical Broccoli COLE SLAW
Ingredients
- COLE SLAW INGREDIENTS
- 1 Bag Cole Slaw
- 1 Medium Red Bell Pepper, chopped
- 4 Green Onions, chopped, green and white parts
- 1/4 Cup Cilantro, chopped
- 1 Medium Mango, skin and seed removed, diced
- 1 Small Can Pineapple Tidbits, reserve the jusice
- FOR THE DRESSING
- 3 TBS Mayonnaise
- 1 TBS Cider Vinegar
- 2 TBS Reserved Pineapple Juice from the Can
- 1 TBS Spicy Brown Mustard
- 2 TBS Sugar
- Pinch of Salt and Pepper to Taste
- Combine all of the Slaw Ingredients in a large bowl.
- Whisk together all of the Slaw Dressing ingredients. Pour over the slaw and fold to combine. Refrigerate covered for 3 hours, Drain excess liquid. Arrange on a serving platter or bowl, cover and return to the fridge overnight.
- Serve Chilled and ENJOY!
