Bourbon Butterscotch Ice Cream Sauce - 52 BBQ and Grilling Dessert Ideas

OK, I apologize, but let's get this out of the way first thing... "Not that There's anything wrong with it".

Recently I got an opportunity to review The Big Gay Ice Cream Book!   here's the legal stuff... "I received this book from Blogging for Books for this review." But the review and opinions are 100% accurate and mine!".  I was very excited to get the book (Today it's going to top 95 degrees and 110% Humidity),  I felt cooler just reading the book.

And it is a great read.  The fellows have a fun story to tell.  Starting out as a summer fling and turning into a nationwide mini but growing conglomerate, the brief history of how the truck came to be, to their current success was inspiring and educational and entertaining.

The book is set up as a High School yearbook, with Freshman classes (Store bought ice cream with unusual and fun toppings), to Sophomore year with recipes for kicked up sauces and toppings (like this one),  Junior year leads to shakes, floats and sundaes; while Senior year encourages you to make your own ice cream!

Just the first chapter alone is worth the price of the book!  A page for each, Vanilla, Chocolate and Strawberry; with a couple dozen unusual topping suggestions (Like Caramelized Bacon for Chocolate Ice Cream) will be an inspiration for decades to come.  Can't wait to try Vanilla with Curried Coconut!

The book is top quality, hard cover... It doesn't show in the photos, but even the cover sparkles with simulated sugar sprinkles mixed into the colors.  Nearly 200 pages, color photos throughout, each recipe has it's own photo and PLENTY of encouraging How-To instructions that will guarantee success.

I just don't have enough good things to say about The Big Gay Ice Cream Book!



As to this sauce, I LOVE THIS!  Very easy to make, and LOADED with Butterscotch flavor and just boozy enough to make this an adult beverage.  Thick and rich and gooey and FABULOUS!

I made this to serve at a backyard BBQ (moved indoors due to the heat).  My friends were licking spoons and the bottom of the bowls.  The recipe made enough for me to give small jars away as parting gifts.  This will be another idea for Small Batch Canning, Gift ideas come Holiday season!

OK... Here's what I did...



Bourbon Butterscotch
Ice Cream Sauce


Ingredients
  • 1 Pound 2 Sticks Butter
  • 2 Cups Brown Sugar
  • 1/4 Cup Dark Corn Syrup
  • 1 Cup Heavy Cream
  • 1/2 tsp Course Brown Sugar
  • 1 tsp Vanilla
  • 1/2 Cup Bourbon
  • Plus a Generous Splash of additional Bourbon to taste
Cooking Directions
  1. Combine the butter, brown sugar, corn syrup, cream, salt, vanilla, and 1/2 cup bourbon in a large sauce pan (using a large sauce pan will help prevent the mixture from boiling over), and cook over medium-low heat, stirring frequently to prevent burning, until the sugar is completely dissolved (the sauce should not have any grit to it). Then cook, stirring, for another 15 minutes, or until the sauce has reduced and thickened; it should be a dark caramel color and thick enough to coat a spoon.
  2. Remove from the heat and stir in the generous splash of bourbon, or to taste. If you have a heavy hand with your pour, who are we to judge? Let cool a bit, until warm, not hot, and gooey, not runny, then pour over ice cream. Eat and repeat.
  3. Store refrigerated in an airtight container for up to two weeks; reheat and stir before using.
  4. Variation: for a not-so-bourbon butterscotch, just leave out the bourbon. But if you do, angels will cry.

I love Canning! Love the idea of it, Love having my own Jellies, Pickled produce, Sauces, Chutneys... All those pint, half pint, 4 Ounce jars,,, Even big quart jars of Spaghetti Sauce Lined up in my basement storage shelves.  Small batch means I can usually finish a project in no more than an hour of hands on work and usually less.  Easy DIY Projects that last a month or more... Great ideas for first time canners!
