Candy Bacon Wrapped Green Bean Bundles - Grilling Time Side Dish

These are gems...

I mean what is not to love... Bacon, with a coating of bacon fat caramel all wrapped around a few pesky vegetables.  If these don't get the pickiest of eaters to try their veggies I just don;t know what would.

Obviously, these are meant as a treat for a special occasion meal.  Thanksgiving, Christmas, just about any family gathering would count.  I served these during a friends birthday dinner and they were very well received.

Certainly not everyday, but always loved when they are served.

And they really are easy.  I like to par cook my beans a bit in advance in garlic oil.  Then I shock them in an ice water bath to lock in the snap.  Makes a nice contrast in textures.

I did cook the ones shown on a grill.  But be sure to use a pan under them to catch the drippings or you will have to deal with constant flare ups.  Of course alternatively you can certainly make them in the oven.

OK... Here's what I did...


Candy Bacon Wrapped Green Bean Bundles 


Ingredients
  • 2 TBS Olive Oil
  • 3 Cloves Minced Garlic
  • 1 Pound Green Snap Beans, ends trimmed
  • 1 Pound Bacon
  • 12 heaping TBS Brown Sugar
  • Special Equipment - a 9X12 pan that has a rack that fits inside so the bacon wrapped beans are suspended above the bacon drippings
  • Plus Tooth Picks
Cooking Directions
  1. Preheat your oven to 350 degrees or if you are grilling, set your grill for for Medium High direct heat. When you close the cover, your grill acts like an oven.
  2. Meanwhile, heat oil over medium heat. Add minced garlic and saute for 1 minute to infuse the oil.
  3. Add the green beans to the oil and saute for 3 minutes until just starting to soften but still have a nice snap when you take a bite.
  4. SHOCK the beans by dumping them into a pan of ice water to stop the cooking.
  5. Wrap 3-5 beans with a single piece of bacon. Secure with a toothpick.
  6. Line up on the rack that fits into the pan.
  7. Sprinkle 1 heaping TBS of brown sugar on each piece of bacon (as the bacon renders, the fat will melt the sugar creating a caramel taste.
  8. Heat in the oven (or in the grill) for 10-15 minutes or until the bacon has crisped on the edges and is cooked through.
  9. Serve Warm and ENJOY!
