Salsa Verde - 52 Grilling time Secret Extras


Salsa Verde... That Green salsa that looks a little like a tomato salsa but has a distinctive taste.  Surprisingly sweet (I had just assumed that it was a salsa loaded up with Jalapenos (... It's Not)).  It is actually a "Cooked Tomatillo Salsa with Cilantro and Jalapeno" and Onions.

Recently I was very lucky to receive a cookbook, Salsas and Moles: Fresh and Authentic Recipes for Pico de Gallo, Mole Poblano, Chimichurri, Guacamole, and More.  And mighty lucky I am.  The book is a specialty cookbook filled with dozens and dozens of variations on classic Salsas (Like Pico De Gallo and this Verde), as well as complicated sauces (Moles with their laundry lists of ingredients), Restaurant secrets de-mystified (Chimichurri sauce) and so much more.

I love the heat/sweet spice combination of the recipe (to follow... keep scrolling).  This is more of a condiment sauce than a dipping sauce.  I made this to add as a condiment for my "try out" practice Christmas meal... Turkey, mashed potatoes, glazed carrots, corn fritters.  Just for fun and to review the recipe, I added a spoonful to every dish.

Mix this in with whipped potatoes... OMG Terrific!

Mix this in with some simple Glazed Carrots... OMG Fantastic!

Top the Corn fritters and you guessed it... A new level of OMG Tastes.

This recipe (and the book) is a wonderful addition to my special meals.  Adds an unusual flavor platform of heat/sweet and rustic flavors, while at the same time the new colorful dish becomes just one more example of something new... something special that sets the mood for my special occasions and now everyday offerings.  The other ideas in the book are just as appealing and I simply can not wait to give a few more a try.

Doesn't happen often, but this is an idea that will change the way I host a meal and cook for my family.

Here's the Salsa Verde and Mashed Potatoes...


 OK... Here's what I did...



Salsa Verde


Ingredients
  • 6 Medium Tomatillos, Husks removed and washed, end tips cut off
  • 5 Cloves Garlic, Minced
  • 1 Small/Medium Onion, Chopped
  • 2 Large Jalapenos, Stems, seeds and white membrane removed, Rough Dice
  • 1 tsp Sea Salt
  • 2 TBS Honey (more if needed to taste, can add sugar also)
  • 1/4 Cup Chopped Cilantro
Cooking Directions
  1. Place the Tomatillos, Garlic, Onion, Jalapeno and Sea Salt in a medium size sauce pan. Add just enough water to cover and heat to simmer over medium high heat.
  2. Simmer until the Tomatillos have softened and a knife can be inserted freely... About 6-8 minutes. Be careful not to overcook.
  3. Drain the water and transfer to a blender or the small bowl of a food processor. Add the Honey and the Cilantro leaves and Pulse/blend until smooth, BUT you can stills see small chunks of Tomatillo and Onion and flecks of Cilantro.
  4. Taste. Adjust Honey, Salt and any additional seasonings you might prefer (Cayenne Pepper Spice if extra heat is needed)'
  5. Serve room temperature or chilled as a condiment and ENJOY!

Kind of an odd title for these posts. But the longer sentence is... Simple recipes that are easy and inexpensive that will take your cooking to the next level... Things like easy pickled items (I always have a jar of Pickled Red Onions for sandwiches in my fridge). Or how about the easiest bread to make in the world... Beer Bread that is tasty on it's own but also makes a wonderful open face pizza style sandwich... With easy to make Tomato Sauce. Or how about Roasting Garlic for a spread on toast points for a unique appetizer. Infusing Oil with Herbs or spices or spicy peppers. Or how about making your own BBQ sauce. Nothing sets you apart as a grill master like setting out a jar of your own specialty BBQ Sauce.

You get the idea. These recipes are very simple, take very little time but will set you apart as a better cook...
