Simple Buttery Herb Peppered Spaghetti Squash - 52 Side Dishes


Here's a treat for fall weather.  I love everything about this recipe.

First of course is always the taste.  Buttery rich flavor with pepper and herbs.  Simple in every level but fills the dish with flavors.

My kitchen gets a homey warm smell of roasting butter... delicious!

The wonderful look of spaghetti, but actually a vegetable, healthy goodness.

And of course the simplicity.  I mostly make this dish when I have some leftovers (like the grilled stuffed pork chop shown... recipe to follow soon).  Takes almost no hands on time, just a little over an hour of roasting time, to create an all new meal!

Easy and simple and a huge tasty payoff!

 OK... Here's what I did...


Simple - Buttery - Herb - Peppered
Spaghetti Squash


Ingredients
  • 1 Medium Spaghetti Squash, sliced in half lengthwise with seeds removed
  • 2 TBS Butter, softened to room temperature
  • an additional 2 TBS Butter
  • Salt and pepper to taste ( this is good with extra pepper but taste as you add and mix
  • Herbs to taste, I used Fresh basil cut into ribbons, but Thyme, Rosemary... try your favorite
Cooking Directions
  1. Preheat oven to 375 degrees. Prepare a rimmed baking sheet with parchment paper or a large silipat.
  2. With a small sharp knife, prick squash all over.
  3. Slice the squash in half, scrape out the seeds and membrane. Rub 1 TBS butter on the flesh of each side.
  4. Place on a rimmed baking sheet flesh side down and roast until tender when pierced with knife, about 1 hour 20 minutes.
  5. Remove from oven, flip the squash flesh side up and scrape squash with a fork to remove flesh in long strands.
  6. Mix with butter, salt and pepper, taste as you go. Add herbs, and continue to taste as you go.
  7. Serve warm and ENJOY!!!

Nothing sets you apart as a grill master like setting out a jar of your own specialty BBQ Sauce.

You get the idea. These recipes are very simple, take very little time but will set you apart as a better cook...
