Chocolate Covered FLUFFERNUTTER Cookies - 52 Snacks for Children's Church

Fluffernutter

A fluffernutter is a sandwich made with peanut butter and marshmallow creme usually served on white bread. Variations of the sandwich include the substitution of wheat bread and the addition of various sweet, salty and savory ingredients. The term fluffernutter can also be used to describe other food items, primarily desserts, that incorporate peanut butter and marshmallow creme.
I was suggested this idea by a transplanted New Englander who has made these for her children for decades.  For her family, they are an annual Christmas tradition in her homemade assortment box of Christmas cookies.

For me, these became one of my most popular treats I offered up at our church's Children worship hour.

VERY simple to make.  The only tricky part (not complicated, just a little tricky) is to melt the chocolate.  Just microwave (see instructions below) in short bursts, 1/2 power and stir in between bursts.

And dip and allow to set and ENJOY!!!

And they did!


 OK... Here's what I did...


Chocolate Covered FLUFFERNUTTER Cookies


Ingredients
  • 48 Ritz Crackers
  • 48 tsp Smooth Peanut Butter
  • 48 tsp Marshmallow Fluff
  • 20 OZ (1 big Bag) Milk Chocolate Chips
Cooking Directions
  1. Coat the non salty side of 24 Ritz crackers with a dollop of Peanut Butter.
  2. Repeat with remaining Rits crackers and the Marshmallow Fluff.
  3. Meanwhile, slowly melt the chocolate chips 1 cup at a time in a microwave safe bowl, 15 second bursts at half power, stir, repeat as needed to get a smooth liquid (it took me 7 "bursts".
  4. Sandwich a peanut bitter Ritz with a Fluff Ritz, repeat to make 24 cracker cookie pairs.
  5. Dip each 1/2 way into the chocolate, set onto wax paper, standing upright, allow to dry at least 2 hours for the chocolate to reset (you can speed the process by transferring to the fridge).
  6. Once dried, repeat the melting and the dipping to completely coat each "Cookie"
  7. Again, cool so the chocolate sets.
  8. Serve room temperature and ENJOY!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
