Fall grilling season is about my favorite time of the year.  No more standing over the grills when it's 90 plus degrees out.  Low humidity and a wonderful crispness in the air.

Grilling steak is about as easy as it gets.  Possibly the oldest form of cooking, just heat and eat.  I only really have two tips for a novice, first and most important is to use an instant read meat thermometer.  They can cost as little as $20 but considering the cost of steak these days and the FACT that once you learn how to use 'em, they guarantee a perfect medium rare steak every time... Money well spent.

Medium rare steak, 135 degrees.  Remove immediately once the center of the steak reads that temp.

Only other tip is to let your meat rest for at least 10 minutes (I let mine rest for 15) before cutting.  This allows the muscles to relaxe, allowing the meat to absorb the juices and again, helps to guarantee that tender and juicy steak.  Nothing dried out.

As to the rub (keep scrolling to see the easy inexpensive DIY recipe), this is a wonderful spicy rub that does indeed feature a few TBS of coffee.  As the juices of the steak mingle with the spices (and coffee), the steak takes on a deep rich flavor not to be beat!

Coffee - Steak 
"WAKE UP YOUR INNER COWBOY" 
BBQ Rub


Ingredients
  • 5 tsp Salt
  • 5 tsp Brown Sugar
  • 3 tsp Chili Powder
  • 2 tsp Fresh Ground Black pepper
  • 1 tsp Onion powder
  • 1 tsp Garlic Poswer
  • 1 tsp Cayenne Pepper
  • 1 tsp Rosemary
  • 1 tsp Turmeric
Cooking Directions
  1. In a bowl, combine all of the ingredients.
  2. Mix well (by hand so you know you have broken up any clumps)
  3. Store in an airtight container at room temperature for up to 3 months.
  4. Rub on a steak or Pork chop, grill, fry or roast as yo like...
  5. And ENJOY!!!
