Tube of Sausage SLOPPY JOES - 52 Church PotLuck Dishes


Something about the "back to school" time of year that puts me in a cost saving mood.

Recently my favorite grocery store offered tubes of bulk sausage for just 99 cents!!!  What a deal.  Now, no one enjoys a simple egg and sausage patty breakfast more than I do but I ended up buying 24 tubes (limit 6, I went back 4 days that week).  That would be a lot of sausage and eggs.

So, I started pondering what I could make with them other than the obvious.

Most of the ingredients come from my pantry (I do can tomato sauce, but a jar of Ragu Brand (watch for sales on those) would work for this).  The rest are staples in my pantry.

The potato was a delicious choice!   Microwave easy as this entire dish is.

And a very much cost saving dish!

OK... Here's what I did...


Tube of Sausage
SLOPPY JOES


Ingredients
  • 1 (1 Pound) Tube of Sausage
  • 1/2 Medium Sweet Onion, Small DIce
  • 3/4 Cup Tomato Sauce
  • 1/4 Cup Worcestershire Sauce
  • Additional Ketchup As Needed
  • Couple of Dashes of Hot Sauce (I used Tabasco Brand)
  • A couple of Baked Potatoes, open face
  • Freshly Grated Cheese (Optional)
  • Sour Cream (Optional)
  • Salt and Pepper to Taste
Cooking Directions
  1. In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain.
  2. Stir in the tomato sauce, Worcestershire sauce and pepper sauce. Add additional Ketchup as needed to thin sauce.
  3. Bring to a simmer.
  4. Reduce heat; cover and simmer for 30 minutes.  Taste, add additional seasoning as needed
  5. Serve on open faced potatoes with cheese and sour cream.
  6. Serve HOT and ENJOY!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
