Cucumber Bites with Salmon - 52 Appetizers Recipes


These are fantastic for a number of reasons... Beautifully colorful, a real standout of a dish. Easy, Really Really DIY Easy to make and cost effective, The whole tray of about 24 appetizers will come in at under $10 total cost!

I recently was asked to cater an art show for a friend that asked me to come up with something "classy" on a budget.  When ever I am asked to follow a budget, Cucumber bites come to mind.  The addition of the smoked salmon combines the two nicely, budget minded and still something that stands out as a bit classy.

I used less than a pound of the salmon.  You can certainly buy a pound of smoked and cured salmon but that would get you out of the budget minded price point.  I have an EASY (very easy) recipe for Sugar/Salt Cured Salmon that only takes a few minutes of hands on work yet replaces that $15 a pound smoked salmon with a very reasonable $5 (or less) a pound Center Cut Salmon section.

It takes little extra effort to make 3 pounds of cured salmon as it does to make 1 pound.  So many fun things to do with cured salmon when you can get some at a reasonable cost.

Perfect dish for a catering appetizer or side dish, Great for a pass a plate PotLuck event or any big family gathering when you want to stand out.

Only a single special need... A small amount of skills with a piping bag to get the swirly star affect in the Cream Cheese.  But that is simple enough or feel free to "Free Form" the dollop of cheese into a blob that gets mostly covered with the salmon anyway.

Cucumber Bites
with Salmon


Ingredients
  • 24 Thin Slices of Cucumber (2 Cucumbers, peeled then sliced thin)
  • FOR THE CREAM CHEESE - 1 Brick (8 Ounces) Cream Cheese, softened to room temperature
  • Plus 2 TBS Ranch Dressing
  • 24 - 1 TBS worth of Smoked Salmon
Cooking Directions
  1. First, prepare your cucumbers, Peel them and then slice thin. I refer to dry them, leave them to air dry for 1 hour, flip and again air dry for another hour.
  2. Meanwhile prepare your cream cheese. In the bowl of a stand mixer mix the Cream Cheese and the liquid Ranch Dressing and mix until well blended.
  3. Put this into a piping bag with a large star tip. Arrange the cucumber slices onto a serving platter (I like the look of a cutting board as a serving platter).
  4. Pipe a tsp worth of the cream cheese mix onto each cucumber (in an attractive star look).
  5. Top the cream cheese with the salmon
  6. Chill in the fridge for an hour for the cream cheese to reset.
  7. Serve chilled and ENJOY!
