Lettuce Wedge Salad with Blue Cheese and Bacon - 52 Specialty Salads and Catering Recipes


Here's a bit of a new twist on a decades old classic... The Immortal Iceberg Lettuce Wedge with Blue Cheese.  The Hit of hundreds of afternoon luncheons and catered events.

Never mind that it is just about the simplest salad to serve, no tossing, almost no cutting or tearing.

I made a couple of changes, instead of an iceberg head of lettuce, I used one of those longer thinner Romaine Lettuce heads.

And the other addition is that I heated the lettuce... serving it up warm.  Easily done in a browler, wonderfully done on an outside grill (dramatic presentation to pull the lettuce of the grill and serve).  You can even grill indoors on a grill frying pan r even on your trusty George Forman Grill.  Just heat until a few grill marks appear and the lettuce sweetens up and gets an all new flavor.

You can always dress this up with some tomato, even peaches (blue cheese dressing and fresh peaches is delicious!).  Me, I like the simplicity.


OK... Here's what I did...


Lettuce Wedge Salad
with Blue Cheese
and Bacon


Ingredients
  • 2 Heads of Romaine Lettuce, Each cut in half lengthwise
  • Drizzle of Olive Oil
  • Blue Cheese Dressing to Taste
  • 4 Strip Bacon, Fried crispy and diced
Cooking Directions
  1. Carefully wash the head of lettuce without separating the leaves from the base. Hang dry. Slice in half lengthwise, again be careful so the leaves all stay attached.
  2. Drizzle Olive Oil over the exposed half of the lettuce.
  3. Set oven to broil (or better yet, use an outdoor grill (high temps) or a grill pan on the stove top (again, preheat on high). Broil or grill the lettuce (if you broil or use a stove top grill pan, exposed side up, if you grill, exposed side down) for about 5 minutes, watching carefully that the lettuce does not over burn. You want this warm with hints of char grill marks but not burnt.
  4. Remove from grill (Broiler), Drizzle with the Blue Cheese Dressing, sprinkle bits of bacon.
  5. Serve warm and ENJOY!
