Bacon Ranch LOADED Potato Salad - 52 BBQ and Grilling Secret Extras and Church PotLuck Side Dishes


OH BOY!  LOADED INDEED!!!

And that tangy taste of Ranch Dressing (Double zinged with Ranch Dip Packets and even more Ranch Salad Dressing added to the mix!

Sharp Cheddar Cheese mixed throughout and beautiful colorful Earthy Green Onions to add flavor and eye appeal...

And of course BACON BACON BACON!

This has become my new favorite Potato Salad.  Took this to a Pot Luck recently.  There were three different potato salads... mine was gone at the end of the day!

Church PotLuck, Family gathering, Neighborhood BBQ picnic... This LOADED recipe fits in everywhere!

OK... Here's what I did...


Bacon Ranch
LOADED Potato Salad


Ingredients
  • 5 Pounds Russet Potatoes, cut into bite sized pieces
  • 1 (16 Ounce) COntainer Sour Cream
  • 2 (1 Ounce) packages Ranch Dressing
  • 1/4 Cup Ranch Salad Dressing
  • 1 Pound Thick Cut Bacon, Cooked Crispy, Drained on a paper towel (Reserve 1/2 Cup for Garnish)
  • 2 Cups Sharp Cheddar Cheese, Shredded
  • 2 Bunches Green Onions, Thinly Sliced, Green and White Parts, (Reserve 1/4 Cup for Garnish)
Cooking Directions
  1. Bring a large pot of water to boil over high heat add the potatoes and reduce the heat to medium high and boil for 12-15 minutes or until fork tender. Drain and rinse under cold water.
  2. In a small bowl whisk together the sour cream, Ranch Dressing and ranch packet until blended. In a large bowl, add potatoes, Most of the bacon, cheddar cheese and Most of the green onions. Stir in the sour cream ranch mixture until blended and coated well. Refrigerate for 2 hours to overnight before serving.
  3. Serve Chilled and ENJOY!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
