Cowboy Caviar (Relish) - 52 BBQ and Grilling Secret Extras and Church PotLuck Side Dishes


Here's you a very versatile recipe.  Perfect for an afternoon BBQ (any side dish that gets made the day in advance is perfect when you are juggling meat on the grill).

It is also bright and colorful enough to look great on a family Potluck, Church social or neighborhood get together.

Versions of this recipe are floating around.  Some call this Texas Caviar (they use Black Eyed Peas).  I changed mine up a bit, adding more Cowboy ingredients... Chili Beans, BBQ Sauce and additional BBQ friendly spices.

OK... Here's what I did...


Cowboy Caviar (Relish)


Ingredients
  • 2 (15 Ounces) Cans Sweet Corn (Drained and Rinsed)
  • 1 (15 Ounces) Can Bush's Brand Black Beans (Drained and Rinsed)
  • 1 (15 Ounces) Can Bush's Brand Chili Beans in Hot Sauce (Optional, you can use the Mildly Spiced version), DO NOT DRAIN
  • 2 Large, Tomatoes, Diced (each piece about the size of one of the beans)
  • 1 Medium Onion, Diced (each piece about the size of one of the beans)
  • 2 Medium Green Bell Peppers, Diced (each piece about the size of one of the beans)
  • 1 Bunch Green Onions, Sliced thin, white and Green Parts
  • 1 Complete head of Garlic, Minced
  • a Jalapeno Pepper, Minced
  • 1 Cup Fresh Cilantro, Leaves only, Rough Chopped
  • 1 Cup Zesty Italian Dressing
  • 1/2 Cup Sugar
  • 1/4 Cup BBQ Sauce of your choice. Add a spicy sauce and the Caviar becomes more spiced. Add a Sweet Mild sauce and the Caviar is sweeter and milder.
  • A TBS of BBQ Spice Rub/Mix... Again, add spicy, get spicy.  Add sweet and mild, get sweet relish.
Cooking Directions
  1. Drain and Rinse the Corn and Black Beans, transfer to a large mixing bowl.
  2. Add all remaining ingredients and mix.
  3. Cover and refrigerate overnight to allow the flavors to blend and combine.
    As needed, you may want to drain through a colander the next day to remove extra liquid.
  4. Taste.  Add additional spices as needed to taste.
  5. Serve Chilled and ENJOY!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
