Tropically Sweet Banana Muffins with MANGO!


 I LOVE my Mango Slicer!!!  Even slices, lots of meat and very little waste.  One of the few tools that works absolutely as advertised.


In the past, buying a Mango was very frustrating.  I have a few knife skills, but the weird shape and pit of the mango caused me to leave more in the garbage than I ever ate.  But NO MORE!  Thank you Mango Slicer!

I love the sweet exotic tropical taste of the fruit.  Perfect to add a little bit of the Caribbean to any dish.  Substituting Mango for about any fruit will work in a lot of recipes and worth trying...

These particular gems come out fantastic, with an added bit of fruity sweetness shining through a "normal" Banana Muffin recipe.  I made this twice, first time I cut the amount of banana in half and added an equal amount of Mango.  It had hints of the tropical flavor, but only hints.  I wanted a POW of Mango flavor.  So second time I doubled the Mango amount and viola... Tropically Sweet Banana Muffins!  Sweet, creamy moist and delicious!

OK... Here's what I did...

Tropically Sweet Banana Muffins with MANGO!

Ingredients

2-1/2 cups all-purpose flour
3/4 teaspoon double-acting baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1-1/2 sticks (3/4 cup) unsalted butter, softened to room temperature
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 tsp Vanilla
3 large eggs
2 mashed ripe bananas (just a bit less than a packed cup and a half)
1-1/2 Cup Small Diced Mango (I used 2)
1/2 cup Greek Yogurt
3/4 cup chopped walnuts

Cooking Instructions
  1. Pre heat oven to 350 degrees
  2. In a stand mixer, add Bananas, Mango, Greek Yogurt and start the mixer.
  3. Add sugars, salt, baking powder, baking soda, Vanilla and eggs
  4. Add flour 1/2 cup at a time
  5. Add Walnuts if you like (I do)
  6. Last step, add butter in chunks.  DO NOT OVER MIX, chunks should be a little visible in the batter 
  7. Pour into molds.  I make mine a little thin, so I only put 2 TBS of batter in the bottom of each mold.
  8. Bake for 30 minutes or until the internal temperature reaches 185 degrees.  
  9. Serve with coffee and the morning paper and indulge in a pad of butter if you like... And ENJOY!
