Sausages with Cranberry Beans (Salsicce con Fagioli Cranberry)



One Pot Meal... Lots of sausages and lots of bacon, some fantastic beans and the thick gravy is made while the dish cooks.  What could be better?

Except your kitchen will smell incredible all day long.

This is one of those hearty dishes perfect for a cold winter day... Enjoy!

Here's what I did...


Sausages with
Cranberry Beans

(Salsicce con Fagioli Cranberry)


Ingredients
  • 2 TBS Olive Oil
  • 1 Pound Italian Sausages, sliced about 1 inch thick
  • 1 Pound Thick Slice Bacon, cut into 1 inch squares
  • 2 Medium Red Onions, Large Dice
  • 4 Cloves Garlic, minced
  • 2 Cups Dried Cranberry Beans (can substitute Pinto beans if you can not find Cranberry), Covered and soaked overnight in cold water then drained, reserving the water.
  • 2 TBS Chopped Fresh Rosemary
  • 2 TBS Chopped Fresh Sage
  • Salt and Pepper To Taste
  • 1-1/2 Cups Dry White Wine
  • Fresh Rosemary Sprigs to Garnish
Cooking Directions
  1. Preheat the oven to 275 degrees.
  2. In an oven proof LARGE Skillet (I used a cast iron skillet) or large casserole dish (must have a lid as well), heat the olive oil, add the sausage slices and bacon and saute for about 10 minutes until browned all over.
  3. Add the onions and continue to saute for another 5 minutes until the onions begin to soften and turn translucent.
  4. Add the Garlic and saute for 1 more minute. Drain off any remaining oil and grease.
  5. Add the wine and 1 Cup of the reserved starchy bean water (helps thicken the gravy naturally).
  6. Gently stir in the herbs and season with salt and pepper.
  7. Bring to a boil over medium high heat.
  8. Cover and move the dish to the preheated (low and slow, 275 degrees) oven
  9. Cook for 2-1/2 hours, taste the beans and make sure they are cooked through and tender.
  10. Serve HOT and garnish with fresh rosemary and ENJOY!

I served this up with some fresh made Marble Rye and some cheesy Polenta.... a wildly flavorful meal that was FANTASTIC.

  1. This dish sounds fantastic Dave - with sausage and bacon how could it not be? Cranberry beans may be my favorite dried bean and I like all of the flavors you used in your dish.
