Sloppy Joes ... Um Sloppy Colonel Sanders (Chicken)


I need to thank another blogger for this idea... It came from one of my favorites, Mary from ONE PERFECT BITE.  One Perfect Bite is a fantastic blog.  Mary has been posting for years and has never missed a day (at least in the last 5 years i have been following).  But she is so much more than just prolific, she is also a font of great recipes, and cooking knowledge.  Someday i hope to grow up and be Mary!

But in the mean time, I am always thrilled to get an idea or two from her.  Like her recent post of "Left over Turkey? Try Sweet Sloppy Joes Tom".  I made a few changes to her recipe.  Not the least of which was I made mine from my beloved store bought, pre-cooked, pre-seasoned Rotisserie Chicken in place of left over turkey.  I also cooked mine in a crock pot (it was one of those days).  Just can't beat cooking when you want and serving when you want without thinking in between.  But I digress...

I have a feeling that my recipe and Mary's taste quite a bit different, so if you are interested in trying something like this yourself, take a look at hers and pick what you like...


Here's what I did...


Sloppy Joes ... Um Sloppy Colonel Sanders (Chicken)


Ingredients
  • This made 6 BIG Sandwiches!
  • 1/2 Cup BBQ Sauce (i used Ray's)
  • 2 TBS Sugar
  • 1/2 tsp Corn Starch
  • 2 TBS Whole Grain Mustard Whole Grain Mustard
  • 1 Can (15 Ounces) Pinto Beans, Drained and rinsed
  • 3/4 Cup Sweet Onion, Diced
  • 1 Can Ro-Tel Brand diced Tomatoes and Green Chilis Liquid and all, do not drain)
  • 2 Cloves Garlic, minced
  • 1 Breast, Diced From a store bought, fully cooked Rotisserie Chicken, removed from the bones, skin removed
  • Pinch Salt
  • 1 Cup Shredded Monterrey Jack Cheese
  • Serve with Fresh made sandwich rolls (or store bought of course)
Cooking Directions
  1. In a Crock pot, Add everything together (except the cheese and the buns.
  2. Set crock pot on low, Cover and allow to cook for at least 8 hours (so the chicken turns to shreds).
  3. Just before serving, add the cheese and stir to mix
  4. Serve HOT on the sandwich rolls and ENJOY!!!

A BIG thanks to Mary for the idea for this recipe.  Mine would have been more spicy than sweet, with the addition of the Ro-Tel Tomatoes and their spices.  I also used BBQ sauce in place of ketchup.  And you know what they say, individual tastes, I was in the mood for something spicy.

I served mine for dinner.  I added a side dish of Smashed Baked Potatoes with Chicken and Mustard Vinaigrette.  The spicy sandwich and the sweet taste of the mustard vinaigrette really made for a party in my mouth!

This recipe has been added to my growing list of "52 Uses For a Rotisserie Chicken"  (Now close to 100!)...I am so confused... $5.49 for a fully cooked, fully seasoned Oven Roasted, Rotisserie Chicken. Yet shop in the raw meat department and most raw chickens are at best $8 each and usually far closer to $10. Anyone have an answer??? Me either. So, I can either rail against the machine, or learn to embrace the beauty that is the $5 chicken! In this pin are recipes I have made, and recommend. MORE than 52 (I just can't stop)..
You get the idea.  From Scratch Pizza to Chinese Take Out recipes, Lots of Soups and Chili... Appetizers to Main Courses (Still can't find a dessert, but I am looking).  More than enough ideas for that store nought bird to shine with just a little extra work

    The funky chicken sandwich sounds great. I have a rotisserie chicken right this very moment because I did NOT feel like cooking tonight.
