Asian Chicken and Noodle Soup



This is a wonderful soup... Think Asian SPICY French Onion Soup.

The noodles are fun, as they are sitting uncooked in the bottom of a bowl.  Add the HOT cooked soup and you have cooked noodles!

Next, I have a limit as to how many extra ingredients I will buy for a recipe.  I bought the Sriracha the recipe (and Adam strongly) recommended.  I did not have any Duck sauce.  But I researched a bit and decided I could substitute a bit of ChiliDawg's PEACHbanero pepper sauce in place of the Duck sauce.

The soup is thin like a broth, but the extra spices really heat this up.  It is not a soup for the faint of heart.

I added an odd ingredient... Peach Jam.  I might have used Duck Sauce, but I didn't have any and am just too cheap to buy some for a single dish.  The Peach Jam was just right to add a little hint of sweetness.  Loved the glass noodles, the oriental taste and of course, Sriracha sauce is legendary for it;s unique spiced taste.  Mother's milk to many!


Here's what I did...

Asian Chicken and Noodle Soup


Ingredients
  • 4 TBS Butter
  • 1 Medium Onion, Diced
  • 4 Cups Chicken Stock
  • 4 TBS Peach Jam
  • 1/2 tsp Minced Habanero Pepper
  • 1 TBS Minced Garlic
  • 1 tsp Sriracha Sauce
  • 2 Chicken Quarters Leg/Thigh quarters from a Rotisserie Chicken, meat removed from bone and diced
  • 2 TBS Miso Paste
  • 4 "Bird's Nest" Glass (cellophane) noodles
  • 2 TBS Scallions (green Onions), sliced for garnish
  • 4 TBS Fresh Cilantro, rough chopped
Cooking Directions
  1. In heavy bottomed large soup pot, heat the butter over medium high heat. Add the onion and saute for 5 minutes, until the onion softens and becomes translucent.
  2. Add the stock and heat to simmer.
  3. Add the Jam, Habanero, Garlic and Sriracha Sauce. Stir to mix and return to simmer.
  4. Simmer for 30 minutes.
  5. Add Miso paste, stir to mix. and heat over high to boiling for 5 minutes
  6. Place 1 bird's nest noodles in each of 4 bowls.
  7. Pour a cup and a half of soup over each nest.  The HOT soup will cook the thin noodles 
  8. Garnish with scallion slices and chopped Cilantro
  9. Serve HOT and Enjoy!!!

MUCH more than a chicken sandwich.  From Scratch Pizza to Chinese Take Out recipes, Lots of Soups and Chili... Appetizers to Main Courses (Still can't find a dessert, but I am looking).  More than enough ideas for that store bought bird to shine with just a little extra work.  All recipes have been tested and WORK!
