Garlic Garlic Chicken and Dumplings!


Not a typo, double Garlic.

And as good as that sounds... It tasted better.  In fact, I am out on a limb here, but I really think this is about the best thing I have ever made.  A terrific garlic seasoned vegetable chicken soup, but on top are the most amazing garlic cheese dumplings.  I cried just a bit when the leftovers were gone.

There's a bit of a secret that I'll share.  The dumpling recipe is a recipe i make often.  In fact, it's one that's been floating around the Internet and before that it had nearly legendary status as the Red Lobster Cheesy Garlic Rolls.

I won't be the first to give the "secret" recipe away, a quick Internet search will show dozens and dozens of bloggers posting this copy cat recipe.  But near as I can tell, I could not find anyone dropping these into a soup and making dense delicious dumplings from them.

So first up, let's give out once again the "secret" Red Lobster style Cheesy Garlic Rolls...


Red Lobster Copy Cat Garlic Cheesy Biscuits


Ingredients
  • 1 1/2 Cups Flour
  • 3 TBS Butter, COLD, cut into dice size
  • 1 TBS Baking Powder
  • 1 tsp Garlic Powder
  • 3/4 Cup Grated Cheddar Cheese
  • 3/4 Cup Milk
  • 1 tsp Salt
  • 2 TBS Butter, Melted
  • 1 tsp Garlic Powder
  • 1 tsp Fresh Herbs (I used Rosemary and Basil)
Cooking Directions
  1. The following directions are for biscuits. If you are making them as dumplings, make the dough, skip the last step and proceed to the Chicken and Dumplings recipe.
  2. Preheat the oven to 400 degrees
  3. Add 1-1/2 Cups flour to a Kitchenaid mixer with the dough hook attachment. Cut in 3 TBS COLD butter, add the Baking powder, Garlic Powder and salt. Turn on the mixer
  4. Add Milk and cheese and knead for 30 seconds. Do not over mix.
  5. Divide into 8 Balls, drop on parchment paper lined cookie sheet, Bake for 14 minutes.
  6. Meanwhile, melt 2 TBS butter, mix in Garlic Powder and Herbs
  7. When biscuits come out of the oven hot, brush with garlic herb butter mix, serve Hot and ENJOY.... bet you can't eat just one.

But I am making these as dumplings for my killer good, Garlic Garlic Chicken and Dumplings...



Garlic Garlic Chicken and Biscuits


Ingredients
  • 1 Batch Pre-baked, Red Lobster Copy Cat Garlic Cheesy Biscuits
  • 3 TBS Butter
  • 3 TBS Flour
  • 1 Medium Onion, DIced
  • 4 Cloves Garlic, chopped, minced
  • 1 Medium Red Bell Pepper
  • 2 Medium Carrots, Diced
  • 2 Stalks of Celeery, sliced thin
  • 1 Cup Frozen Corn, thawed
  • 4 Cups Chicken Stock
  • 2 Cups White Meat from a Rotisserie chicken, diced
  • Salt and Pepper to taste
  • 2 TBS Butter
  • 1 tsp Garlic Powder
  • 1 tsp Fresh Herbs (I used Rosemary and Basil)
Cooking Directions
  1. First, Make a roux.... In a large Oven Safe Saute Pan (this is a one dish meal), heat the butter until melted and warm... Slowly add flour and stir for a couple of minutes until well incorporated. be careful not to burn the roux and stir the entire time.
  2. Add the Onions and saute for 3 minutes, until soft. Add another TBS of butter if needed to thin the roux.
  3. Add the garlic and stir another 1 minute.
  4. Add the Carrots, Celery, Bell Pepper and corn
  5. Add the chicken stock and stir.
  6. Allow to simmer for 30 minutes until the carrots and celery are soft, and the soup has thickened slightly (thanks to the roux).
  7. Add the already cooked chicken meat from a rotisserie chicken.
  8. Add Salt and Pepper to taste
  9. Preheat the oven to 400 degrees
  10. Drop the "Red Lobster Copy Cat Garlic Cheesy Biscuits" dough on top of the simmering liquid in spoonfuls, should be able to get 8 dumplings.
  11. Bake in the oven for 15 minutes.
  12. Heat 2 TBS Butter, mix in Garlic Powder and the fresh herbs
  13. After 15 minutes, remove Chicken and biscuits from the oven, brush on the herb garlic butter mix on top of the dumplings, return to oven, set to broil and broil for 2-4 minutes for the dumplings to slightly char for an added crunchy texture and presentation.
  14. Serve HOT and ENJOY!!!
Honest and truly, best Soup I have ever made, and maybe the best dish i have ever made...  Garlic Heaven!
