Walnut White Chocolate Snowcaps Cookies


Here it is, almost a full week into spring and I have a fresh layer of half a FOOT of snow on top of my grill.

Sigh...

This is my  version of Southern treat called, Smoky Mountain Snowcaps.  Looking out on what I pray is the last snowfall of the season, I felt inspired.

These are a chewy almost shortbread texture cookie.  Savory and LOADED with Walnuts, Spicy and interestingly flavored with nutmeg and all made pretty (and hinting of snow) by a final dusting of powdered sugar.

A grown up cookie, for grown up tastes and delicious!

OK... Here's what I did...


Walnut White Chocolate Snowcaps


Ingredients
  • 8 Oz White Chocolate Chips
  • 3/4 Cup Butter, Softened
  • 1 Cup Sugar
  • 3 Large Eggs
  • 1 tsp. Vanilla
  • 3-1/2 Cups Flour
  • 1 tsp. Baking Powder
  • 1 Large Pinch of Salt
  • 1 pinch Nutmeg
  • 2 Cups Chopped Walnuts
  • 1/4 Cup Powdered Sugar for dusting/garnish
Cooking Directions
  1. Preheat oven to 350 degrees
  2. Melt white chocolate chips in a microwave, using 20 second bursts, stirring after each burst until smooth
  3. In a stand mixer, beat the butter and sugar together until fluffy, about 5 minutes
  4. Add eggs one at a time, beating until blended after each egg.
  5. Add vanilla and beat well.
  6. Add melted white chocolate and beat well.
  7. Mix the flour, baking powder, salt and nutmeg/ Add this mix to the wet ingredients and mix until just combined
  8. Add the walnut pieces and stir to even mix
  9. Drop dough by heaping tablespoons onto parchment paper lined baking sheet
  10. Bake for 10 minutes.
  11. Allow to cool on the baking sheet for 2 minutes then transfer to a cooling rack.
  12. Garnish with a sprinkling of powdered sugar
  13. Serve WARM with a COLD glass of MILK and ENJOY!!!
