Mango in Jalapeno & Lime O Olive Oil
All of the entrees in the O Olive Oil cooking contest are in. It is going to take a few days to go over everything and make sure we hook up the right products with the best bloggers who entered.

As a cook who uses lots of O Olive Oil product, I am very excited to see what all these great cooks have in mind for their pressed oils and gourmet vinegars. Keep watching this blog, updates will be coming soon.
In the mean time, take a look something so simple and delicious I recently found...
For some reason, in the middle of Kansas, fresh mangoes went on sale... 59 cents each! I love mangoes. Sweet and just a little tart. Add some fresh strips of mango into a sautee pan with just a TBS of O Olive Oil's Jalapeno & Lime Olive oil and you add a touch of heat to the sweet. be careful not to have the oil too hot. I was not trying to fry the mango, just heat everything up, helping to infuse the flavors of the jalepeno into the sweet mango.
Worked like a charm and was a great addition to a simple lettuce salad. Fresh fruit, crisp sharp flavored oils and vinegars... Truly the Rites of Spring!
