Cucumber Salad - Tomatoes, Red Onions, Mint and Feta with O Olive Oil Vinaigrette

Summertime and the salads are easy!

Fresh, raw and easy.

There is one tiny trick to making this salad.  I like to soak my red onions in some red wine vinegar to take the bite out.  The soaking adds a bit of sweetness to the taste.

That friend to bloggers everywhere, O Olive Oil makes a delicious Cassis Pinot Noir Vinegar...

Wild black currants steeped in shimmering California champagne made from Pinot Noir grapes. Sweet, dark berry flavor, rich in anti-oxidants. A favorite of chefs. 

Simply slice the onions thin and add a TBS of the vinegar.  Allow them to soak for at least 20 minutes.

Which gives you time to slice some tomatoes...
Peel and slice some cucumbers...
Crumble some feta cheese...
Pick a few leaves of fresh mint...
